  • Cook 1 pound cheese tortellini as the label directs; drain and rinse under cold water. Toss with 1 pint halved heirloom cherry tomatoes, 8 ounces pearl mozzarella balls, 1/2 cup chopped basil, 1/3 cup olive oil and 2 tablespoons white balsamic vinegar. Season with salt and pepper.

A twist on the classic, this Tortellini Caprese Salad is the pasta salad of the summer--and every season in between. Toss it together in 10 minutes and enjoy the fresh flavors of basil, tomatoes, cheesy tortellini and a delicious balsamic glaze. A perfect side but also hearty enough for a meal!

20 oz cheese tortellini, uncooked (approximately 5 cups uncooked)
10 oz. cherry tomatoes, halved
8 oz. Mozzarella pearls
1 c chopped spinach
1/4 c chopped basil
1/2 c olive oil
2 T balsamic vinegar
3-4 garlic cloves, minced
3/4 tsp Italian seasoning
1/2 tsp salt and pepper
Balsamic glaze (optional)

Steps:

  • Cook tortellini according to instructions. Prep and chop all other ingredients and set aside.
  • When tortellini is cooked al dente, strain the water and then rinse with cool water for a few seconds to cool it slightly. Add the tortellini to a medium to large bowl. Add in the spinach, tomatoes, basil and garlic. Pour over the olive oil, balsamic vinegar and add the Italian seasoning, salt and pepper. Toss the salad well to combine.
  • Chill until ready to serve. When ready to serve, toss well to redistribute the olive oil that is on the bottom of the bowl. Add more olive oil if it seems too dry. Add a drizzle of balsamic glaze just before serving.
  • Store in the refrigerator in an airtight container for up to 5 days.

I needed to fix a lunch for my husband and was determined not to make the same old sandwich thing. I had these ingredients on hand. Turned out great and he loved it! This is one of those recipes you can add or take away and even substitute ingredients, enjoy!

10 oz pkg. spinach, cheese, tortellini
1/2 c grape tomatoes cut in 2
1/2 pkg burrata or fresh mozzarella cheese (chopped)
1 medium handful of fresh basil chopped
1/4 c sliced green olives
1 Tbsp parmesan cheese
2 Tbsp balsamic vinegar
3 Tbsp olive oil (light works best)
3 dash(es) hot sauce
1 tsp fresh squeezed lemon
2 Tbsp pine nuts

Steps:

  • 1. Boil the pasta according to package directions and cool to room temp.
  • 2. If using the Burrata, it will be very creamy. Burrata is Mozzarella with cream inside. So I sliced it and let it drain a bit before adding it to the bowl. chop the basil and cut the tomatoes in half. Chop the olives. Add Pasta to dish and gently mix together.
  • 3. Dressing: Mix olive oil, vinegar, hot sauce, lemon, salt and pepper into a jar and shake a few times until well incorporated. Add dressing to salad and stir until blended, top with Parm. and Pine nuts
