Time 35m

Yield 9 serving(s)

Number Of Ingredients 8

2 (19 ounce) bags frozen cheese tortellini
4 cups broccoli florets
2 cups cherry tomatoes, cut in half (or whole grape tomatoes)
2 tablespoons chopped fresh chives or 2 tablespoons green onions
1 cup coleslaw dressing
1 lb bacon, cooked and crumbled
1/4 cup sunflower seeds
salt and pepper

Steps:

  • Prepare the tortellini according to package directions; rinse with cold water; drain.
  • In a large bowl, mix the tortellini, broccoli, tomatoes, chives, and dressing.
  • Cover and refrigerate 1-2 hours.
  • Right before ready to serve, add bacon and sunflower seeds; gently stir to combine.
  • Season to taste with salt and pepper.
  • Serve cold.

Tips:

  • Use a variety of tortellini. Different types of tortellini, such as cheese, meat, or vegetable, can add different flavors and textures to the salad.
  • Cook the tortellini al dente. This means that the tortellini should be cooked until it is tender but still has a slight bite to it.
  • Use fresh broccoli. Fresh broccoli has a more vibrant flavor and a better texture than frozen broccoli.
  • Blanch the broccoli. Blanching the broccoli helps to brighten its color and preserve its nutrients.
  • Use crispy bacon. Crispy bacon adds a smoky, salty flavor to the salad.
  • Use a light dressing. A light dressing, such as a vinaigrette, will help to keep the salad light and refreshing.
  • Serve the salad immediately. Tortellini salad is best served immediately after it is made, while the tortellini is still warm and the broccoli is still crisp.

Conclusion:

Tortellini broccoli and bacon salad is a delicious and easy-to-make salad that is perfect for a light lunch or dinner. The combination of tortellini, broccoli, bacon, and a light dressing is flavorful and satisfying, and the salad is sure to be a hit with everyone who tries it.
