My mom used to make this and it is my favorite meal. The pork butts come out so tender and juicy. 'Butts' are a favorite in my family. Serve with baked or mashed potatoes and a veggie. If you like a lot of sauce then double the recipe, the sauce is fantastic.

2 pork shoulder (Boston butt) steaks
1 large onion, sliced
2 cups ketchup
2 cups water
salt and pepper to taste

  • Heat a large skillet over medium heat. Season the pork steaks on both sides with salt, pepper and garlic powder. Place in the skillet and cook until browned on each side, about 4 minutes per side.
  • Place sliced onions on top of the steaks in the pan. Stir together the ketchup and water in a medium bowl; pour over the steaks. Bring to a simmer, then reduce the heat to medium-low, cover and cook for about 2 hours. The longer you cook, the better the meat tastes.

PAN-BROILED STEAK WITH WHISKEY SAUCE

Pan-Broiled Steak With Whiskey Sauce image

This recipe is one for all you carnivores. Nothing like a good ole steak with some really great sauce. Don't get me wrong, sometimes a steak doesn't need anything other than cooking, but this sauce is pretty dog-gone good. It's excellent for company or just a special meal with your honey.

Time 35m

Yield 4 serving(s)

Number Of Ingredients 11

4 steaks, sliced (1-inch thick)
1 tablespoon black peppercorns, coarsely crushed
2 -3 garlic cloves, finely chopped
1/2 teaspoon kosher salt
1/4 lb unsalted butter
2 tablespoons chopped onions
1 garlic clove, finely chopped
2 tablespoons whiskey (I like Jack Daniels)
1 tablespoon Worcestershire sauce
1/2 teaspoon dry mustard
1 dash Tabasco sauce, if desired but recommended (optional)

Steps:

  • Trim away any excess fat from the steak or steaks.
  • Press the crushed peppercorns and garlic onto both sides of the steak and let it stand at room temperature 1 hour.
  • Heat a heavy iron skillet over high heat.
  • Grease the skillet with a piece of the fat trimmed from the steak.
  • Toss in about half the salt.
  • Sear the steaks quickly on one side, then lift out; add the remaining salt to the skillet, turn the steak and sear the other side.
  • Reduce the heat to moderate and cook the steaks as desired.
  • Remove to a warmed platter.
  • Make the sauce.
  • Pour off fat from the skillet.
  • Melt the butter in the skillet over low heat.
  • Add the onion and garlic and cook slowly until soft, stirring often.
  • Add the remaining ingredients and simmer for 1 to 2 minutes.
  • Pour over the steak or steaks and serve.

Tips:

  • When choosing a top butt steak, look for one that is well-marbled with fat. This will help to keep the steak moist and flavorful during cooking.
  • To tenderize the steak, marinate it in a mixture of whiskey, mustard, olive oil, garlic, and herbs for at least 30 minutes before cooking.
  • Cook the steak over medium-high heat to get a nice sear on the outside while keeping the inside tender and juicy.
  • Let the steak rest for a few minutes before slicing and serving. This will help to redistribute the juices and keep the steak moist.
  • Serve the steak with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad.

Conclusion:

Top butt steak is an affordable and versatile cut of beef that can be cooked in a variety of ways. Whether you grill it, pan-fry it, or braise it, this steak is sure to please.
