Tips:

  • Select ripe, firm tomatoes: Look for tomatoes that are deep red in color and free from blemishes. Avoid tomatoes that are soft or have bruises.
  • Roast the garlic and pearl onions ahead of time: This can be done up to 2 days in advance. Simply toss the garlic and onions with olive oil, salt, and pepper, and roast at 400 degrees Fahrenheit for 20-25 minutes, or until softened and caramelized.
  • Slice the tomatoes evenly: This will help them cook evenly. If you have a mandoline slicer, use it to get perfectly even slices. If not, use a sharp knife to slice the tomatoes about 1/4 inch thick.
  • Use fresh mozzarella cheese: Fresh mozzarella cheese is softer and more flavorful than pre-packaged mozzarella cheese. If you can't find fresh mozzarella, you can use shredded mozzarella cheese instead.
  • Don't overcrowd the baking dish: If you overcrowd the baking dish, the tomatoes will not cook evenly. Make sure there is enough space between the tomatoes so that they can cook evenly.
  • Bake the tomatoes until they are softened and slightly caramelized: This will take about 20-25 minutes. Keep an eye on the tomatoes so that they don't overcook.
  • Serve the tomatoes immediately: These tomatoes are best served warm, right out of the oven. You can garnish them with fresh basil or parsley, if desired.

Conclusion:

This recipe for Tomatoes with Roasted Garlic, Pearl Onions, and Mozzarella Cheese is a delicious and easy-to-make side dish that is perfect for any occasion. The tomatoes are roasted until they are softened and slightly caramelized, and the garlic and pearl onions add a delicious flavor. The mozzarella cheese melts perfectly on top, creating a gooey and flavorful dish. This recipe is sure to be a hit with everyone who tries it!
