This is so simple and delicious! I've never had tomato sauce like this before. This is the only way I will make my fresh tomato sauce from now on!

1 1/2 lbs ripe plum tomatoes, cut into large chunks about 16 small pieces per tomato
1 (2 ounce) can of flat anchovies packed in oil, minced
4 cloves garlic, minced
1/2 teaspoon dry crushed red pepper
1 teaspoon dried basil
1/2 cup extra virgin olive oil
salt and pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Combine everything in a 13x9x2-inch glass baking dish, mix well.
  • Bake uncovered for about 40 minutes or until tomatoes are tender, wrinkled and starting to brown at edges.
  • Serve over any kind of pasta you like.
  • One time I added about 1 pound of peeled and deveined raw shrimp into the sauce right when it came out of the oven.
  • Stirred it up and the shrimp was cooked in a few minutes!

8 ripe tomatoes
6 -8 slices ricotta cheese
1 tablespoon white sugar
4 spring onions
1 sprig fresh basil (or1/4 tsp dried)
8 anchovies, drained and rinsed
4 tablespoons apple cider vinegar
1 tablespoon lemon juice
6 tablespoons olive oil
2 cloves garlic, crushed
1/4 teaspoon freshly ground black pepper
12 black olives

Steps:

  • Slice tomatoes thinly using a very sharp knife.
  • Place ricotta slices at intervals on a flat dish cover with sliced tomatoes and sprinkle with sugar.
  • Wash, peel and thinly slice spring onions.
  • Scatter over tomatoes.
  • Fresh basil leaves and sprinkle over salad.
  • (If this is not available, include dried basil in the dressing.) Mix anchovies, vinegar, lemon juice, olive oil, garlic and black pepper in a blender or use an electric hand mixer.

2 tablespoons extra virgin olive oil
1 teaspoon minced garlic
4 to 6 anchovy fillets, with some of their oil
1 28-ounce can tomatoes, crushed or chopped and drained of their juice
Salt and fresh-ground black pepper

Steps:

  • Put the olive oil in a deep skillet, and turn the heat to medium. A minute later, add the garlic and the anchovies, and stir. When the garlic sizzles and the anchovies break up, add the tomatoes.

1 pound bowtie-shaped pasta (farfalle)
3/4 cup finely chopped onion
1 garlic clove, minced
2 tablespoons olive oil
a 2-ounce can flat anchovy fillets, drained and minced
a 28- to 32-ounce can tomatoes, drained, reserving juice, and chopped
1 tablespoon balsamic vinegar
1/2 teaspoon dried hot red pepper flakes
2 tablespoons drained capers, chopped
2 ounces thinly sliced prosciutto, chopped (about 1/2 cup)
1/4 cup finely chopped fresh basil or parsley leaves (wash and dry before chopping), or to taste
Accompaniment: freshly grated Parmesan

Steps:

  • In a 6-quart kettle bring 5 quarts salted water to a boil for pasta.
  • In a large skillet cook onion and garlic in oil over moderately low heat, stirring, until onion is softened. Add anchovies and cook, stirring, 1 minute.
