MEDITERRANEAN TILAPIA
We had some beautiful tilapia fillets, but no recipes! I had recently bought some amazing sun-dried tomatoes packed in oil, and decided to invent a slightly Mediterranean fish dish for a quick weeknight dinner. My husband is a recipe purist, always follows them to the letter, but after this, he's learned to trust my inventions!

Tips:
- Choose firm, ripe tomatoes: Look for tomatoes that are fully ripe, but still firm to the touch. Avoid tomatoes that are bruised or have soft spots.
- Use a variety of walnuts: Feel free to mix and match different types of walnuts, such as black walnuts, English walnuts, and walnuts.
- Don't overcook the tilapia: Tilapia is a delicate fish that can easily be overcooked. Cook it just until it is opaque throughout, about 3-4 minutes per side.
- Serve immediately: Serve the tilapia as soon as it is cooked, while it is still hot and crispy.
Conclusion:
This tomato walnut tilapia recipe is a delicious and healthy way to enjoy tilapia. The combination of tomatoes, walnuts, and tilapia is flavorful and satisfying. This recipe is also easy to make and can be on the table in under 30 minutes. Serve it with your favorite sides, such as rice, potatoes, or roasted vegetables.
