3 medium tomatoes, seeded and chopped
1 medium green pepper, chopped
1 celery rib, thinly sliced
1/2 cup chopped red onion
2 tablespoons cider vinegar
1 tablespoon sugar

1 medium red onion, sliced thin
4 Tbsp sugar
1/2 c apple cider vinegar
1/2 tsp celery seed
3/4 tsp dried dill weed or seed
1/2 tsp salt
1/2 tsp fresh cracked pepper
2 stalk(s) celery.. strings removed and thinly sliced
3 large narrow cucumbers sliced and scored down the outer green sides wih a fork.

Steps:

  • 1. Rinse the sliced and separated onion rings under cold water for a few minutes to remove the harshness. Drain well.
  • 2. In a large bowl, whisk the vinegar, sugar, celery seed, dill, salt and pepper until the sugar is dissolved.
  • 3. Toss in the sliced and scored cucumbers, celery slices and onion rings.
  • 4. Let marinate in the refrigerator, at least 20 minutes before serving. This is even better the next day Makes 1 quart of delicious salad.. *****Note: I even used it on my fish tacos...nice and crunchy!

2 large tomatoes, diced
1 large sweet onions, cut into thin strips
4 green onions, chopped
1 bunch cilantro leaves, minced into tiny strips
2 limes, juiced
⅓ cup rice vinegar
kosher salt to taste

3 -4 large ripe tomatoes
1/2-1 medium sweet onion, depending on how much onion you like (Vidallia is my favorite)
1/4 cup extra virgin olive oil
1 tablespoon dried oregano
1/4 teaspoon garlic salt
1/8 teaspoon fresh cracked black pepper
4 -6 leaves fresh basil, chopped to garnish (depending on how much Basil you like)

Steps:
