TOMATO SUMMER SQUASH SOUP

Tomato Summer Squash Soup image

This is a great recipe to use food from the summer garden. Although the recipe calls for canned tomatoes, one could add 2 cups fresh tomatoes. I used canned tomatoes with basil, oregano & garlic seasoning. I also sauteed the vegetables in olive oil instead of the broth. DH said this is great! CREAMY SUMMER SQUASH SOUP

Creamy Summer Squash Soup image

I adapted this recipe from another I'd come across and created something a little more hearty and creamy. All it needs is the right combination of spices. This is an extremely simple soup to create, and it goes well with any type of hearth or grainy bread.

Time 35m

Yield 6

Number Of Ingredients 10

6 small yellow summer squash, trimmed and coarsely chopped
1 large zucchini, trimmed and coarsely chopped
2 cups vegetable stock
1 cup half-and-half cream
2 tablespoons chopped fresh tarragon
1 cup shredded Cheddar cheese
ground white pepper to taste
coarse sea salt to taste
2 tablespoons lemon juice, or more to taste
1 teaspoon chopped fresh tarragon

Steps:

  • Place the summer squash, zucchini, vegetable stock, half-and-half, and tarragon into a large soup pot; bring to a boil, reduce heat to a simmer, and cook until the vegetables are tender, about 10 minutes.
  • Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until nearly smooth, and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
  • Sprinkle the Cheddar cheese into the hot soup, and allow to melt; stir until thoroughly mixed. Stir in the lemon juice, and top with a sprinkling of tarragon to serve.

Provided by Martha Rose Shulman

Categories     weekday, side dish

Time 15m

Yield 4 to 6 servings

Number Of Ingredients 7

2 tablespoons extra virgin olive oil
1 1/2 pounds medium or small zucchini or other summer squash, thinly sliced or diced depending on what shape squash you use
2 garlic cloves, minced
1 pound ripe tomatoes, grated on the large holes of a box grater, or peeled, seeded and diced
Salt
freshly ground pepper
1 to 2 tablespoons chopped or slivered fresh basil (to taste)

Steps:

  • Heat 1 tablespoon of the olive oil over medium-high heat in a wide, heavy skillet. Add the zucchini. Cook, stirring or shaking the pan, until the zucchini is lightly seared and beginning to soften, three to five minutes. Remove from the pan, and set aside.
  • Add the remaining olive oil to the pan, then the garlic. Cook, stirring, just until fragrant -- less than 30 seconds. Stir in the tomatoes. Cook, stirring, until the tomatoes have begun to cook down, about five minutes. Return the zucchini to the pan, add salt and pepper to taste, and reduce the heat to medium. Cook, stirring often, until the zucchini is tender and translucent and the tomatoes have cooked down to a fragrant sauce. Stir in the basil, and taste and adjust seasonings. Remove from the heat and serve hot, or allow to cool and serve at room temperature.

Tips:

  • Choose ripe, flavorful tomatoes. The key to a great tomato soup is using ripe, flavorful tomatoes. Look for tomatoes that are deep red, plump, and free of blemishes. You can use a variety of tomato varieties, such as Roma, San Marzano, or heirloom tomatoes.
  • Roast the tomatoes and squash. Roasting the tomatoes and squash intensifies their flavor and gives the soup a smoky, caramelized taste. To roast the vegetables, simply toss them with olive oil, salt, and pepper, and then roast them in a preheated oven until they are tender and slightly browned.
  • Use a good quality broth. The broth is the base of the soup, so it's important to use a good quality broth. You can use chicken broth, vegetable broth, or even a combination of the two. If you're using a store-bought broth, be sure to choose one that is low in sodium.
  • Don't overcook the soup. Tomato soup is best when it is slightly chunky, so don't overcook it. Once the vegetables are tender and the soup is heated through, remove it from the heat and serve immediately.
  • Garnish the soup with fresh herbs. Fresh herbs, such as basil, oregano, or thyme, add a pop of color and flavor to tomato soup. Chop the herbs finely and sprinkle them over the soup before serving.

Conclusion:

Tomato summer squash soup is a delicious, easy-to-make soup that is perfect for a summer meal. The soup is made with fresh tomatoes, summer squash, and a variety of herbs and spices. It is a healthy and flavorful soup that can be enjoyed by people of all ages.
