Time 30m

Yield 18 muffins

Number Of Ingredients 11

2 cups flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon clove
1 teaspoon cinnamon
1 teaspoon nutmeg
1 cup buttermilk
1 egg, lightly beaten
1/2 cup butter, melted
1/2 cup raisins (optional)
1/2 cup pecans, chopped (optional)

Steps:

  • Combine dry ingredients. Stir in milk, egg, and butter, beating only enough to blend. Stir in raisins and nuts, of desired.
  • Fill greased muffin cups 3/4 full. Bake at 400º for 20 minutes or until muffins test done.

Tips:

  • Choose ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the taste of your muffins. Look for tomatoes that are deep red and free of blemishes.
  • Use a food processor or blender to finely chop the tomatoes: This will help to ensure that the tomatoes are evenly distributed throughout the muffins and that they don't overpower the other ingredients.
  • Don't overmix the batter: Overmixing can result in tough, dense muffins. Mix the batter just until the ingredients are combined.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This is the best way to ensure that the muffins are cooked through.
  • Let the muffins cool completely before serving: This will help them to set and firm up.

Conclusion:

Tomato spice muffins are a delicious and easy-to-make snack or breakfast option. They are packed with flavor and nutrients, and they can be enjoyed by people of all ages.
