Steps:
- Cook bacon on medium heat in a large saucepan until lightly browned and fat is rendered. Use a slotted spoon to remove bacon from the pan. Set on a plate lined with a paper towel.
- Add the chopped onion to the pot, cook in the bacon fat on medium heat until soft. Add the minced garlic and cook a minute more. Add the chopped peeled potatoes and cook a few minutes more.
- Add the tomatoes and chicken broth. Cook until potatoes are cooked through, about 20 minutes (or longer).
- Stir in the brown sugar. Add half of the beans to the mixture. Use an immersion blender to blend about half of the soup mixture (or blend half of the soup in a standing blender and return to the pot).
- Add bacon to the soup and the rest of the beans. Add salt and pepper to taste.
- Serve with crusty bread.
Tips:
- Use ripe tomatoes for the best flavor. You can use fresh, canned, or frozen tomatoes for this soup, but ripe tomatoes will give you the best flavor.
- Don't overcrowd the pan when cooking the vegetables. If you overcrowd the pan, the vegetables will steam instead of sautéing, and they won't develop as much flavor.
- Season the soup to taste. Add salt, pepper, and other seasonings to taste until the soup is flavorful but not too salty.
- Serve the soup with your favorite toppings. Some popular toppings for tomato soup include croutons, grated cheese, sour cream, and chopped bacon.
Conclusion:
Tomato soup is a classic comfort food that is easy to make and loved by people of all ages. This recipe for tomato soup with white bean and bacon is a hearty and flavorful variation on the classic. The white beans add a boost of protein and fiber, while the bacon adds a smoky flavor. This soup is perfect for a cold day or a quick and easy weeknight meal.
