TOMATO AND SAUSAGE TART
This tart is wonderful for brunch or a light lunch or supper. Serve with a mixed green or fruit salad. I've made this many times over the years and always get a lot of compliments when I serve it. Garden-fresh tomatoes are a big plus in this tart--to peel easily, spearing the tomato with a fork, immerse briefly in boiling water, run under cold water and the peel just slips off! Originally from a Bon Appetit Breakfasts and Brunches cookbook, published in 1983.

- Cook the sausage in a skillet over medium heat. Add onion and garlic, and cook stirring occasionally until sausage is browned, and onions are translucent. Drain and set aside. In a small bowl, mix together the mustard, 1 egg and light cream until well blended. Stir into the sausage mixture.
- Sprinkle 1 cup of the mozzarella cheese over the bottom of the pie crust. Place the sausage mixture over the cheese. Arrange tomato slices over the sausage layer, then top with the remaining cheese. Sprinkle dried basil and oregano over the cheese.
- Bake for 35 to 40 minutes in the preheated oven, until heated through and bubbly. Let stand for 20 minutes before slicing. Serve with Basil Mayonnaise.
- To make Basil Mayonnaise, combine the fresh basil, 1 egg, and lemon juice in a blender or food processor. Blend to mix, then gradually drizzle in oil while blending. Season with salt and pepper to taste.

Tips:
- Use a variety of tomatoes. This will give your tart a more complex flavor. Cherry tomatoes, Roma tomatoes, and heirloom tomatoes are all good choices.
- Roast the tomatoes before using them. This will concentrate their flavor and make them sweeter.
- Use a good quality sausage. The sausage is one of the main ingredients in this tart, so it's important to use a sausage that you enjoy the taste of. A spicy sausage will give your tart a nice kick, while a milder sausage will be more subtle.
- Don't overcook the tart. The tart should be cooked until the crust is golden brown and the filling is set. Overcooking will make the crust dry and the filling rubbery.
- Serve the tart warm or at room temperature. This tart is best served warm or at room temperature. If you're serving it cold, let it come to room temperature for about 30 minutes before serving.
Conclusion:
The Tomato Sausage Tart is a delicious and easy-to-make dish that is perfect for any occasion. With its simple ingredients and flavorful filling, this tart is sure to be a hit with everyone who tries it. So next time you're looking for a quick and easy meal, give this tart a try!
