Steps:
- In a bowl, mix all the ingredients together. The tahini mixture will become watery, then it will shrink, and then again it will become a bit loose while you mix. If your tahini dressing is too thick, add a little bit of cold water and mix again. Adjust ingredients to your liking.
- Chop the tomatoes and the cucumber into cubes. Add the tahini dressing and mix the salad.
- Sprinkle with chopped parsley and serve.

CUCUMBER TOMATO TAHINI SALAD
Steps:
- For the dressing, make my lime tahini sauce recipe by blending tahini paste, lime juice, water, kosher salt together, then stir in a good cup of parsley. You can do this one night ahead of time and save it covered in the fridge. (If the tahini sauce becomes thicker as it sits in the fridge, you can stir in more lime juice or water to loosen it).
- To make the salad, in a medium mixing bowl, combine the tahini sauce with the diced cucumbers, tomatoes, and jalapeno. Add the Aleppo-style pepper, if using. Mix well. Taste and add salt to your liking. And if needed, add more lime juice.

SALATA TAHINI--MIDDLE EASTERN TAHINI SALAD
This recipe goes well with just about every middle eastern dish. Its very flavorful, one of my favorites. I make this at home, but I am not good at keeping measurements, so I snagged it off of the web and tweaked it, to the way I make it at home.*To spice it up you can also add chopped hot pepper to it as well*.

Steps:
- *May need to adjust tahini and water levels to desired consistency*. Consistency should be creamy.
- Dice up tomatoes and cucumbers and combine them together in a medium bowl.
- Place garlic, hot pepper and salt in a mortar.
- Smash until mushed.
- Tahini dressing takes a bit of stirring to become creamy so, you can either add tahini, and water in a bowl by itself and mix or you can add to the same bowl with the cucumbers and tomatoes.
- Add lemon in increments to achieve desired tartness.
- Stir the dressing until smooth and creamy.
- combine everything including garlic/hot pepper together making sure you have added the mint.
- Take tbsp of dried mint, Place in hand and take other hand and rub together, this will sort of grind the mint up smaller and separate it from any stems.
- Place in the refrigerator for at least 20 minutes to allow the flavors to meld.
- Serve with a swirl of olive oil on top.
- Enjoy!

Tips:
- Choose ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the flavor of your salad, so make sure to select ripe, juicy tomatoes that are in season. Look for tomatoes that are a deep red color and have a slight give when you gently squeeze them.
- Use fresh herbs: Fresh herbs, such as cilantro, parsley, and mint, add a burst of flavor and aroma to the salad. If you can, use freshly picked herbs from your garden or a local farmer's market.
- Make sure your tahini sauce is well-seasoned: The tahini sauce is a key component of this salad, so make sure it is well-seasoned. Add lemon juice, garlic, and salt to taste until you achieve a balance of flavors.
- Don't overcrowd the salad: When assembling the salad, don't overcrowd the bowl. Arrange the tomatoes and herbs in a single layer so that each ingredient has a chance to shine.
- Serve the salad immediately: This salad is best served immediately after it is made. The tomatoes will start to release their juices and the herbs will wilt if the salad sits for too long.
Conclusion:
This tomato salad with tahini sauce is a refreshing and flavorful dish that is perfect for a summer meal. The combination of sweet tomatoes, tangy tahini sauce, and fresh herbs is sure to please everyone at your table. Serve this salad as a side dish or as a light lunch or dinner.
