The recipe for this fresh salad can also be used to make a quick sauce or relish -- just be sure to dice the tomatoes instead of cutting them into wedges. From the book "Lucinda's Rustic Italian Kitchen," by Lucinda Scala Quinn (Wiley).

Number Of Ingredients 9

4 fresh ripe tomatoes
1 teaspoon coarse salt
1 small red onion, sliced thinly length-wise (about 1/2 cup)
1/4 cup chopped fresh flat-leaf parsley
2 cloves garlic, minced
2 tablespoons torn fresh basil leaves
1/2 teaspoon fresh thyme or oregano, or 1/4 teaspoon dried
3 tablespoons extra-virgin olive oil
1 loaf fresh whole bread, torn in pieces

Steps:

  • Bring a small pot of water to a boil. Submerge each tomato for 10 seconds each and immediately run under cold water. The skin should easily peel off. Cut out the core, slice into thin wedges and place in a medium-size bowl. Add the salt and mix.
  • Add the onion, parsley, garlic, basil, thyme or oregano, and olive oil. Stir until well combined. Chill until ready to serve, preferably at least 30 minutes. Serve in salad bowls with hunks of bread on the side.

Tips:

  • Choose ripe, flavorful tomatoes: The quality of your tomatoes will make a big difference in the flavor of your salad. Look for tomatoes that are deep red and have a slightly sweet smell.
  • Cut the tomatoes evenly: This will help them cook evenly and prevent them from falling apart.
  • Don't overcrowd the pan: If you overcrowd the pan, the tomatoes will steam instead of roasting.
  • Roast the tomatoes at a high temperature: This will help them caramelize and develop a deep flavor.
  • Season the tomatoes with salt and pepper: This will help to enhance their flavor.
  • Add fresh herbs: Fresh herbs, such as basil, oregano, and thyme, will add a nice flavor to your salad.
  • Serve the salad warm or at room temperature: Roasted tomato salad is best served warm or at room temperature. If you chill it, the tomatoes will lose their flavor.

Conclusion:

Roasted tomato salad is a simple but delicious dish that is perfect for a summer meal. It is easy to make and can be customized to your own taste. With just a few ingredients, you can create a salad that is both flavorful and healthy. So next time you are looking for a quick and easy meal, give roasted tomato salad a try. You won't be disappointed!
