Time 9h20m

Yield 10 serving(s)

Number Of Ingredients 14

4 cups vegetable broth (or chicken broth)
4 cups tomato juice
1 tablespoon dried basil leaves
1 -1 1/2 teaspoon salt
1 teaspoon dried oregano leaves
1/2 teaspoon pepper
1 cup sliced carrot
1 cup sliced celery
1/2 cup chopped onion
1 cup sliced mushrooms
2 -3 cloves garlic, minced
1 (28 ounce) can diced tomatoes, undrained
1 1/2 cups uncooked rotini pasta
shredded parmesan cheese

Steps:

  • Add all ingredients except for pasta and cheese to a slow-cooker.
  • Cover and cook on LOW for 8-9 hours.
  • Add in pasta; stir.
  • Increase setting to HIGH; cover and cook 15-20 minutes or until pasta is tender; season with more salt/pepper if desired.
  • Ladle into individual bowls; sprinkle with parmesan cheese.

Tips:

  • Select ripe tomatoes: The quality of your tomatoes greatly influences the flavor of your soup. Choose ripe, juicy tomatoes with a vibrant red color for the best taste.
  • Roast the tomatoes: Roasting tomatoes intensifies their sweetness and flavor. This step is optional, but highly recommended for a richer and more flavorful soup.
  • Use a good quality vegetable broth: Since the broth forms the base of the soup, it's important to use a high-quality broth. You can use store-bought or homemade vegetable broth. If using store-bought, choose a low-sodium option.
  • Don't overcook the rotini: Rotini should be cooked al dente, meaning cooked through but still slightly firm to the bite. Overcooking the pasta will make it mushy and ruin the texture of the soup.
  • Add fresh herbs: Fresh herbs like basil, oregano, and thyme add a vibrant flavor to the soup. Stir them in just before serving for the best flavor.

Conclusion:

This tomato rotini soup is a delicious and versatile dish that can be easily customized to your liking. It's perfect for a quick and easy weeknight meal or as a comforting lunch on a cold day. With its vibrant red color and rich flavor, this soup is sure to be a hit with the whole family. So next time you're craving a hearty and flavorful soup, give this tomato rotini soup a try – you won't be disappointed!
