1/4 cup extra-virgin olive oil
1 small red chile, chopped or thinly sliced
1 large clove garlic, thinly sliced
1 round loaf crusty bread with or without sesame seeds
1 large ripe tomato
Salt
2 tablespoonfuls capote capers or sliced caper berries
A scant handful pitted black olives, coarsely chopped
8 thin anchovy fillets, drained, optional

Steps:

  • Heat about 1/4 cup extra-virgin olive oil in a small skillet over medium heat. Add the chile and garlic and saute for 2 to 3 minutes. Turn off the heat and cool a couple of minutes.
  • Halve the bread across horizontally and toast or char.
  • Halve the tomato across horizontally and rub the flesh vigorously into the toasted surface of the bread and season with salt, to taste. If you are garnishing with anchovies skip the salt. 2 tablespoons onions, minced
1 -2 tablespoon fresh herb (basil or parlsey, can substitute 1/4 tsp dried)
fresh ground black pepper
1 1/2 cups baking mix such as Bisquick (good clones or substitutes on Zaar)
1/2 teaspoon baking powder
1/4 cup buttermilk
1/4 cup water
4 -5 ripe tomatoes, peeled and cut into 1/2 inch slices (best if using center slices drained 10 minutes if extra juicy)
2 tablespoons parmesan cheese (I double this amount) or 2 tablespoons romano cheese (I double this amount)

Steps:

  • Preheat oven 350 degrees.
  • Thoroughly mix mayonnaise, cheddar cheese, minced onions, herbs and pepper; set aside.
  • In large mixing bowl, mix together baking mix, baking powder, buttermilk and water.
  • With floured fingers, pat mixture into the bottom and sides of a lightly greased and floured 9" pie pan.
  • Bake crust 10 minutes. Remove from oven.
  • Arrange tomato slices on top of crust to completely cover; cut smaller pieces of tomato to fill in gaps. At this point you may want to lightly salt the tomatoes.
  • Spread mayonnaise mixture over tomatoes and sprinkle with parmesan cheese.

1 cup water
1 (.25 ounce) package instant yeast
¼ cup vegetable oil
⅓ cup honey
¼ cup chopped fresh parsley
¼ cup chopped green onions
2 cloves garlic
1 carrot, shredded
1 teaspoon salt
6 cups bread flour

Steps:

  • In a sauce pan, heat the tomato juice and water over a low heat until warm to the touch. Pour into a large warmed bowl, and add yeast and honey; stir to dissolve yeast. Allow to rest until yeast is creamy.
  • Mix in oil, parsley, onion, garlic, carrot, and salt. Add 1 cup of the flour, and stir until smooth. Add more flour, until a firm dough is formed. Knead five minutes on a lightly floured surface. Place dough in a greased bowl, and turn to coat the surface completely. Allow to rise in a warm place until doubled in size.
  • Punch down, and divide into halves. Form two loaves, and put into greased 9 x 5 inch loaf pans. Allow to rise for another 45 minutes, or until loaves have doubled in size.
