As I was preparing tomato soup for lunch recently, I remembered those two additional ingredients. I had forgotten what a tasty difference the peanut butter and cheese make. -Eleanor Stamen, Whitehall, Pennsylvania

KATHERINE'S SAVORY TOMATO PEANUT BUTTER SOUP
Recipe by Lois Laing. Lois substituted the vegetable broth for the the beef stock called for in the original recipe. Giving credit where credit is due: "From Grandma's Kitchen by Marilyn Brass & Sheila Brass. This soup is good served hot or cold. The peanut butter adds richness to the soup, yet it is not readily identifiable upon tasting. This soup takes on a whole new personality when served cold.

Tips:
- Choose ripe tomatoes: Use ripe, juicy tomatoes for the best flavor. Look for tomatoes that are deep red in color and have no blemishes.
- Use creamy peanut butter: Creamy peanut butter will give the soup a smooth and creamy texture. Avoid using chunky peanut butter, as it will not blend well.
- Add vegetables for extra nutrition: Feel free to add other vegetables to the soup, such as carrots, celery, or onions. This will add extra nutrition and flavor to the soup.
- Adjust the spiciness to your liking: If you like spicy food, you can add a pinch of cayenne pepper or red pepper flakes to the soup. Start with a small amount and add more to taste.
- Serve with your favorite toppings: Serve the soup with your favorite toppings, such as croutons, chopped peanuts, or a dollop of yogurt.
Conclusion:
Tomato peanut butter soup is a delicious, easy-to-make soup that is perfect for a quick and healthy meal. It is a great way to use up leftover tomatoes and peanut butter, and it can be easily customized to your liking. So next time you are looking for a new and exciting soup recipe, give tomato peanut butter soup a try. You won't be disappointed!
