Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

30 cherry tomatoes
1/2 small red onion, finely chopped
1/4 cup mint, fresh & finely chopped
3 tablespoons extra virgin olive oil
1 lemon, juice
1 lemon, zest of
salt
pepper

Steps:

  • Slice tomatoes in half and place in bowl.
  • Add onion and mint to tomatoes and mix.
  • Drizzle with olive oil and lemon juice.
  • Sprinkle the lemon zest on top.
  • Salt and pepper to taste.
  • Let salad marinate for 20 minutes before serving.

Tips:

  • Choose ripe, flavorful tomatoes. This is key to a great salad, as the tomatoes are the star of the show. Look for tomatoes that are deep red and free of blemishes.
  • Use fresh mint. Mint is a refreshing herb that pairs perfectly with the sweet tomatoes and tangy red onion. If you can't find fresh mint, you can substitute dried mint, but use only half the amount.
  • Thinly slice the red onion. This will help to mellow out the onion's sharp flavor.
  • Use a good quality olive oil. The olive oil is used to dress the salad, so it's important to use a good quality oil that has a fruity flavor.
  • Season the salad to taste. Add salt and pepper to taste, and then adjust the flavors with additional vinegar or sugar, if desired.

Conclusion:

This tomato, mint, and red onion salad is a refreshing and flavorful side dish that is perfect for summer gatherings. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a light and healthy salad, give this one a try!
