4 tablespoons plus more for baking dish butter
2 cups uncooked elbow macaroni
2 tablespoons minced onion
4 tablespoons all purpose flour
1 teaspoon plus more for seasoning salt
3/4 tablespoon dry mustard
1/4 teaspoon paprika
2 cups milk
3 cups shredded, divided cheddar cheese
2 ripe blanched, peeled, and cut into 1/2-inch thick slices tomatoes
freshly ground black pepper

Steps:

  • Preheat the oven to 375 °F. Lightly butter a 13 by 9 by 2-inch baking dish.
  • Bring 6 cups of salted water to a boil over high heat. Add the macaroni and cook until al dente. Drain and set aside.
  • Melt the butter in a large saucepan over medium heat. Add the onion and cook, stirring constantly, until tender. Add the flour, salt, dry mustard and paprika; mix well. Stir in the milk and cook until thickened, about 5 minutes. Add 2 cups of the shredded cheese and stir until melted. Toss in the macaroni and pour into the prepared dish. Cover the macaroni with tomato slices and season salt and pepper, to taste. Bake for 35 to 45 minutes. The last few minutes, top with the remaining cheese and return to the oven until the cheese melts. Serve hot.

1 quart half-and-half
2 cups chicken broth

1 sleeve buttery round crackers (such as Ritz®), crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain, return macaroni to pot, and stir tomatoes into the macaroni. Cook over medium heat until the macaroni absorbs some of the liquid from the tomatoes, about 4 minutes. Remove from heat.
  • Melt butter in a large saucepan over medium-high heat. Stir flour into melted butter and cook until bubbly, 1 to 2 minutes. 1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground nutmeg
3/4 pound fresh tomatoes (4 small)
1 1/2 cups fresh white bread crumbs (5 slices, crusts removed)

Steps:

3 cups milk
1/4 lb butter

2 cans stewed tomatoes

One 10.75-ounce can condensed tomato soup
1 1/4 cups milk
8 ounces sharp Cheddar, freshly grated
4 ounces sharp American deli cheese, torn into large pieces
1/3 cup panko breadcrumbs, seasoned or unseasoned
1/4 cup grated Parmesan

Steps:

  • Preheat your oven to 350 degrees F and grease a 9-inch square (or 2-quart) baking dish with butter.
