Littleneck Clams with Tamarind-Tomato Broth, Scallion, Ginger and Cellophane Noodles image

Provided by Food Network

Categories     appetizer

Time 1h50m

Yield 4 servings

Number Of Ingredients 15

3 ounces tamarind paste (in brick form)
1 tablespoon palm sugar
1 stalk lemongrass, smashed
3 cloves garlic, mashed and minced
16 littleneck clams
1/2 cup cornmeal
4 cups whole plum tomatoes (fresh or canned), crushed
4 ounces cellophane noodles
2 tablespoons ginger juice (from grated and squeezed fresh ginger)
3 tablespoons thick sweet soy sauce (called kecap manis)
1 bird's eye chile, minced
8 Thai basil leaves, stacked, rolled and thinly sliced (called chiffonade)
3 tablespoons Thai fish sauce
1 scallion, thinly sliced
1 medium lemon, zested

Steps:

  • In a pot, combine all the tamarind, palm sugar, lemongrass and 2 1/2 cups water and bring to a boil. Mash the mixture with a potato masher. Strain the stock through a fine-mesh strainer lined with cheesecloth while pressing with the back of a wooden spoon. (This can be done 4 to 5 days in advance.) Keep refrigerated until needed.
  • Purge the clams: In a bowl, combine the clams, cornmeal, and 4 cups of cold water. Place in the refrigerator for about 30 to 40 minutes, to clean out any sand. Remove the clams from the water and discard the water.
  • Pass the tomatoes through a food mill to remove the seeds (they can be bitter), so that only the juice remains. Set aside.
  • Bring a pot of water to a boil and cook the cellophane noodles for 4 to 6 minutes, or until done. Strain and put 1/2 cup each of the noodles in 4 wide soup bowls.
  • In a wok fitted with a steamer rack (or circular cake rack), bring the tamarind stock, ginger juice, and tomato juice to a boil. Place the clams on the rack, cover, and cook until they open and release their juice into the broth. Divide the clams among the soup bowls, leaving the broth in the wok.
  • Stir the sweet soy sauce, minced chile, and basil into the broth and simmer for 1 minute. Remove from the heat and stir in the fish sauce. Ladle the broth over the clams and garnish with scallions and lemon zest. Serve immediately.

Zucchini remains in the farmers' markets into the fall. Even if you can't find fresh tomatoes, you can make this easy pasta with canned tomatoes. The days may be cooler now, but the dish will remind you of summer.

Provided by Martha Rose Shulman

Categories     dinner, weekday, main course

Time 40m

Yield Serves four

Number Of Ingredients 9

2 tablespoons extra virgin olive oil
1 to 2 garlic cloves (to taste), minced
1 pound zucchini, cut in 1/4-inch dice
1 pound tomatoes, peeled, seeded* and cut in 1/4-inch dice, or 1 14-ounce can diced tomatoes, partially drained
Salt
freshly ground pepper to taste
7 to 8 ounces thin rice sticks
3 to 4 tablespoons chopped fresh mint
1/4 cup freshly grated Parmesan or pecorino or crumbled feta (optional)

Steps:

  • Bring a large pot of water to a boil. Meanwhile, place the rice sticks in a large bowl, and cover with hot water. Let sit 20 minutes, until pliable. Drain and cut the noodles in half, into roughly 6- to 8-inch lengths, with kitchen scissors.
  • While the rice sticks are soaking, heat 1 tablespoon of the olive oil over medium heat in a wide, heavy skillet, and add the garlic. Cook, stirring, until fragrant, about 30 seconds, and add the zucchini. Cook, stirring, until the zucchini begins to soften and the skin becomes bright green, about three minutes. Add the tomatoes with juice and salt and pepper to taste. Cook, stirring often, for 6 to 10 minutes until the zucchini is tender and the tomatoes have begun to break down. Remove from the heat, taste and adjust seasonings, and set aside.
  • When the water comes to a boil, salt generously and add the rice sticks. Boil one minute and drain. Toss with the zucchini and tomato mixture, the remaining olive oil and the mint. Serve, passing the cheese for people to sprinkle on at the table.

NOODLES AND TOMATOES

Noodles and Tomatoes image

My grandmother started making this dish for us when we were kids. That was quite a few years ago! She once commented that she must have made a dump truck full of macaroni for us. I still make this -- it's comfort food for me. This is a very butter/tomatoey dish. It's not spicy and meant to be bland so that the creaminess of the butter, the tang of the tomatoes and the flavor of the pasta shine.

Provided by Denise

Categories     One Dish Meal

Time 13m

Yield 4 serving(s)

Number Of Ingredients 5

2 cups prepared pasta (I prefer egg noodles or elbows)
1 (14 ounce) can crushed tomatoes (you can use whole tomatoes as well and just moosh them up)
2 -3 tablespoons butter
salt
pepper

Steps:

  • Prepare the pasta according to pacakge directions and drain well.
  • While the pasta is draining, melt the butter in the pasta pot.
  • Add the pasta back to the pot, mix well.
  • Add the crushed tomatoes, mix well and serve.

Tips:

  • Select ripe and flavorful tomatoes: The quality of the tomatoes used directly impacts the flavor of the tomato juice. Choose ripe, juicy tomatoes with a deep red color for the best results.
  • Use fresh herbs: Fresh herbs like basil, oregano, and thyme add a burst of flavor to the tomato juice. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use half the amount as they are more concentrated.
  • Don't overcook the noodles: The noodles should be cooked al dente, meaning they should have a slight bite to them. Overcooked noodles will become mushy and ruin the texture of the dish.
  • Add cheese for extra flavor: Grated Parmesan cheese or crumbled feta cheese can be added to the tomato juice and noodles for extra flavor and richness. You can also add other types of cheese, such as mozzarella or cheddar, if you prefer.
  • Serve with a side of bread or salad: Tomato juice and noodles is a hearty and satisfying meal, but it can be even better when served with a side of bread or salad. This will help to balance out the flavors and make the meal more complete.

Conclusion:

Tomato juice and noodles is a delicious and easy-to-make dish that is perfect for a quick and satisfying meal. With just a few simple ingredients, you can create a flavorful and nutritious meal that the whole family will enjoy. Whether you serve it as a main course or a side dish, tomato juice and noodles is sure to be a hit.
