Argentinean Garlic Chicken With Corn, Tomato and Parsley Sauce image

Fresh, mildly spicy & very refreshing. Plan to use on grilled chicken quarters - skin on & bone in! (Of course adjusting the heat & cooking time for the different meat - longer lower basically). Would be nice alongside Recipe#357666 or Recipe#368271 . Received in an email from Dalton Harris via gourmet-recipes-from-around-the-world. Thanks Dalton!

Time 30m

Yield 6 serving(s)

Number Of Ingredients 9

10 ounces fettuccine pasta (dry)
2 tablespoons garlic, minced
2 large tomatoes, seeded and chopped
2 cups corn kernels (fresh or frozen)
1/2 cup white wine
1 tablespoon olive oil
4 tablespoons basil, chopped
salt
pepper

Steps:

  • Combine garlic, tomatoes, corn, wine, oil and basil into a large pot.
  • Cover and bring to a boil.
  • Reduce heat.
  • Keep warm.
  • Bring 4 quarts of water to a boil.
  • Add pasta and stir to separate noodles.
  • Cook about 8 minutes or until al dente, drain.
  • Add to the tomato mixture and toss.
  • Serve immediately and season to taste with salt and pepper.
  • For a different taste try a flavored pasta: spinach, garlic, tomato.

Tips:

  • Choose ripe tomatoes: Selecting ripe, flavorful tomatoes is crucial for the dish's success. Look for tomatoes that are deep red, firm, and have a smooth skin.
  • Use fresh garlic: Fresh garlic adds a vibrant aroma and taste to the dish. Avoid using pre-minced garlic, as it tends to be less flavorful.
  • Roast the tomatoes and garlic: Roasting intensifies the flavors of the tomatoes and garlic, giving them a smoky, caramelized taste. Make sure to roast them until they are slightly charred for maximum flavor.
  • Use a high-quality olive oil: A good quality olive oil not only adds flavor but also helps bring out the natural flavors of the other ingredients. Choose an extra-virgin olive oil for the best taste.
  • Season generously: Don't be shy with the salt and pepper. Seasoning the tomatoes and garlic well before roasting helps enhance their flavors.
  • Add fresh herbs: Fresh herbs like basil, oregano, or thyme add a delightful aromatic touch to the dish. Stir them in just before serving for maximum freshness.
