Spicy paprika
Garlic powder
Italian seasoning
Salt and pepper
1 boneless pork butt (approximately 7 pounds)
50 fluid ounces coconut milk (recommended: Chaokoh)
250 grams yellow curry paste (recommended: Mae Ploy)
5 tablespoons finely chopped ginger
5 tablespoons finely chopped garlic
1 tablespoon Chinese fermented black beans, rinsed and chopped
1/4 cup sesame oil
8 to 10 kaffir lime leaves
1/4 bunch fresh cilantro
1/4 jalapeno pepper
4 cloves garlic
2 cups basmati rice
3 tablespoons butter
Salt and pepper
1 jalapeno pepper
1 poblano pepper
1 tablespoon cumin seeds
1 red onion
6 to 8 tomatoes
1/2 bunch fresh cilantro
2 limes, juiced
Salt and pepper
Corn tortillas, for serving

Steps:

  • For the pork: Preheat the oven to 350 degrees F. Rub the spices into the pork and roast for about 8 hours. Let cool. Pull apart and discard any fat. Put the pork pieces in a large pot and add the coconut milk.
  • Meanwhile, for the curry sauce: Saute the curry paste, ginger, garlic, and black beans in sesame oil until fragrant, 3 to 4 minutes. Add this mixture to the pot with the pork and coconut milk. Add the lime leaves. Braise on low heat for 1 to 2 hours.
  • For the rice: Blend the cilantro, jalapeno, garlic, and 1 cup of water. Put this mixture in a pot on the stove. Add the basmati rice. Add 2 1/2 cups water. Bring to a boil, and then simmer, covered, until the rice absorbs the liquid, 20 to 25 minutes. When done, add the butter and salt and pepper, to taste.
  • For the salsa: Roast the jalapeno and poblano peppers, peel, and remove the seeds. Toast the cumin seeds and then grind. Dice the tomatoes and red onion and mix together in a bowl with the other salsa ingredients.
  • Heat the corn tortillas on a griddle. Plate the rice, put the pork with sauce on top, and finish with salsa and tortillas.

4 tablespoons butter
1/3 cup finely diced onion
1/3 cup finely diced green bell pepper
1 garlic clove, crushed
1 tablespoon curry powder
1/2 teaspoon dried thyme
16 ounces stewed tomatoes, chopped with liquid
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Melt butter in a skillet and add onion, bell pepper, garlic, curry powder and, thyme. Cook, stirring, over medium heat until vegetables are softened. Add tomatoes and liquid and simmer gently for 5 minutes. You may add water if sauce becomes too thick. Season with salt and pepper to taste.

1 lb linguine
10 ounces shrimp, peeled and de-veined
4 tablespoons extra virgin olive oil
1 tablespoon tomato paste
1 dried hot red chili pepper, crushed
1 cup heavy cream
1 tablespoon curry powder
1 large red bell pepper, seeded an diced
salt

Steps:

  • Cook spaghetti in a large pot of boiling salted water until al dente (cooked just right).
  • Meanwhile, medium heat olive oil in a heavy skillet or cast iron frying pan.
  • Add shrimp and and bell pepper and cook for 2 minutes, turning once.
  • In a separate skillet add cream, stir in tomato paste, curry powder, chili pepper and heat to a light boil.
  • Add shrimp, bell pepper and cook sauce for 2 minutes.
  • Drain pasta (do not rinse) and add it to the skillet containing the shrimp sauce.
  • Cook for 1 minute over medium heat, stirring lightly to mix.
  • Salt to taste.
  • Arrange this spaghetti recipe on a platter and serve with parmesan cheese and french bread.

• 3 tablespoons peanut or canola oil
• 1 medium onion, thinly sliced
• 1 garlic clove, very finely chopped
• 1 jalapeño, seeded and minced
• 1/2 tablespoon minced fresh ginger
• 1 1/2 tablespoons mild curry powder
• One 28-ounce can Italian peeled tomatoes, drained and chopped, juices reserved
• One 14-ounce can unsweetened coconut milk
• 1 teaspoon sugar
• Salt and freshly ground pepper
• 1 1/4 pounds shelled and deveined large shrimp
• 1/4 cup very coarsely chopped cilantro

Steps:

  • 1. In a medium saucepan, heat 2 tablespoons of the peanut oil until shimmering. Add the onion, garlic, jalapeño and ginger and cook over moderately high heat, stirring, until softened, about 5 minutes. Add the curry powder and cook until fragrant. Add the tomatoes and their juices, the coconut milk and sugar, season with salt and pepper and bring to a boil. Simmer over moderate heat, stirring occasionally, until slightly thickened, 15 minutes. 2. In a large skillet, heat the remaining 1 tablespoon of peanut oil until almost smoking. Add the shrimp in a single layer and cook over moderately high heat, turning once, until lightly browned but not cooked through, about 2 minutes. Add the coconut-curry sauce to the skillet and simmer until it is thickened and the shrimp are just cooked through, 3 to 4 minutes. Stir in the cilantro and serve.
