6 to 7 medium ripe tomatoes, (sliced into wedges (on-the-vine tomatoes or heirloom tomatoes preferred) )
1 medium red onion, (halved, then thinly sliced)
3 garlic cloves, (minced)
1 cup packed chopped fresh parsley leaves, (chopped )
1 cup packed chopped fresh dill, (chopped)
2 1/2 tsp ground sumac
Kosher salt, (to your liking)
Black pepper, (to your liking)
1 lemon, (juice of)
2 tsp white wine vinegar
1/3 cup extra virgin olive oil
Feta cheese, (to your liking, optional )

Steps:

  • In a large salad or mixing bowl, add the tomatoes, onions, fresh herbs and garlic.

2 garlic cloves, smashed to a paste with a little salt
3 tablespoons red wine vinegar
1/4 cup extra-virgin olive oil

2 pints (10 ounces each) grape or cherry tomatoes, halved
Fine salt
1 small garlic clove
1/2 cup extra-virgin olive oil
2 tablespoons red-wine vinegar
1/2 English cucumber, halved lengthwise and thinly sliced
2 celery stalks, thinly sliced crosswise
4 radishes, thinly sliced
1 cup fresh basil leaves (from 1 bunch)
1/2 cup fresh parsley leaves
2 tablespoons salt-packed capers, rinsed, soaked in cold water, rinsed again, and minced

  • Preheat oven to 450 degrees. In a small bowl, cover onion with cold water. Swish water around, rubbing onion slices with your hand.
