MY MOTHER'S BUTTER, TOMATO, AND ONION SAUCE

My Mother's Butter, Tomato, and Onion Sauce image

The easiest tomato sauce recipe for pasta only has 3 ingredients.

Provided by Guiliano Hazan

Categories     Sauce     Onion     Tomato     Vegetarian     Butter     3-Ingredient Recipes     Pasta     Dinner

Yield Makes enough for 1 pound dried pasta

Number Of Ingredients 4

2 pounds ripe tomatoes, or 3 cups canned whole peeled tomatoes with their juice
1 medium sweet yellow onion
5 tablespoons butter
1 1/4 teaspoons salt

Steps:

  • If using fresh tomatoes, peel them. Coarsely chop the fresh or canned tomatoes. Trim both ends of the onion; peel it and cut it in half lengthwise.
  • Put the tomatoes, onion, butter, and salt in a 4- to 5-quart saucepan over medium heat. When the tomatoes begin to bubble, lower the heat to a slow but steady simmer. Cook, stirring every 10 to 15 minutes, until the tomatoes are no longer watery and the sauce has reduced, about 45 minutes, depending on the size and shape of the pot. The sauce is done when the butter has separated from the tomatoes and there is no remaining liquid.

SPICED TOMATO JAM/BUTTER

Spiced Tomato Jam/Butter image

Cinnamon, allspice, and cloves make this tomato jam more like a 'butter' than a jam. I actually won a blue ribbon at the Indiana State Fair with this recipe several years ago! My husband enjoyed this often as a child. I had never heard of it before marrying him. Using firm, meaty tomatoes will yield a thicker jam.

Time 9h20m

Yield 96

Number Of Ingredients 9

2 ¼ pounds tomatoes, peeled and chopped
1 ½ teaspoons lemon zest
½ teaspoon ground allspice
½ teaspoon ground cinnamon, or more to taste
¼ teaspoon ground cloves
¼ cup lemon juice
1 (1.75 ounce) package powdered pectin
4 ½ cups white sugar
6 (1 pint) canning jars with lids and rings

Steps:

  • Place the tomatoes in a saucepan with a lid and simmer over medium heat, stirring frequently, for 10 minutes. Stir the lemon zest, allspice, cinnamon, cloves, lemon juice, and pectin into the tomatoes. Place the saucepan over high heat. Stirring constantly, bring the tomato mixture to a boil; immediately upon boiling, stir the sugar into the tomato mixture and return to a full rolling boil. Allow to cook at a full boil for 1 minute while stirring. Remove from heat and skim any foam off the surface of the mixture.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the tomato jam into the hot, sterilized jars, filling the jars to within 1/2 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 5 minutes.
  • Remove the jars from the stockpot and place several inches apart onto a cloth-covered or wood surface; allow to sit until cool or overnight. Check the seal by pressing the top of each lid with a finger (the lid should not move up or down at all).

Chicken and Vegetable Stew in Peanut Butter Tomato Sauce: Mafe image

Provided by Food Network

Categories     main-dish

Time 1h45m

Yield 4 servings

Number Of Ingredients 14

1/4 cup peanut or vegetable oil
1 (3-pound) chicken, cut in eighths
1 large onion, chopped
1/4 cup tomato paste
1 teaspoon salt
1 large tomato, chopped
1/2 pound potato (1 large one)
1 small cabbage, cut in 1/2-inch pieces (or 6 Brussels sprouts)
1/2 pound carrots, peeled and cut into small chunks
1 small butternut squash, peeled and cut into 1/2-inch pieces (or 6 patty pans, cut in half)
3 tablespoons Thai or Vietnamese fish sauce
1/2 cup peanut butter or "tigadege" (roasted peanut paste)
1 Scotch bonnet pepper, whole, optional
Steamed white rice, for serving

Steps:

  • In a large pot, heat oil until hot and brown chicken pieces on all sides. Remove chicken temporarily.
  • In the same frying pan, add the onions and stir until soft and slightly brown. Add the tomato paste and salt, and stir well.
  • Add all the prepared vegetables and fish sauce to the pot. Return the chicken to the pot and add just enough water to cover. Bring to a boil, stir, and reduce heat to medium. Simmer for approximately 30 minutes. Check the vegetables to avoid overcooking, removing them in a bowl as they are done.
  • When all the vegetables are cooked and removed from the stew, add the peanut butter or "tigadege", 1 tablespoon at a time to make sure it is well dissolved in the broth. Add the Scotch bonnet pepper, if using and simmer until broth thickens, about 20 to 30 minutes.
  • Return all the vegetables to the pot and simmer 5 minutes more. Serve over white rice.

Goat Cheese and Sun-Dried Tomato Stuffed Chicken Thighs with Sage Brown Butter Sauce image

These little bundles are packed with flavor. You'll definitely want to serve this with a nice crusty bread so you can clean your plate of all of that delicious sauce! Remind guests to remove toothpicks or kitchen twine before eating!

Provided by Kim's Cooking Now

Categories     Meat and Poultry Recipes     Chicken     Chicken Thigh Recipes

Time 55m

Yield 4

Number Of Ingredients 12

4 ounces goat cheese with garlic and herbs
¼ cup chopped sun-dried tomatoes with herbs (such as California Sun-Dry®)
¼ cup flour
1 ½ teaspoons salt
½ teaspoon ground black pepper
1 ½ pounds boneless, skinless chicken thighs
4 tablespoons butter, divided
2 tablespoons olive oil
¼ cup chopped fresh sage
½ cup chicken broth
½ cup white wine
lemon, juiced

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine goat cheese and sun-dried tomatoes in a small bowl; set aside. Combine flour, salt, and pepper in a second small bowl and set aside.
  • Place chicken thighs on a cutting board and layer a piece of plastic wrap on top. Pound thighs slightly with a meat mallet to flatten. Divide goat cheese mixture among all of the flattened chicken thighs; spread evenly down the middle. Starting at the short end, roll up the chicken thighs and secure with toothpicks or kitchen twine.
  • Dredge chicken rolls in the flour mixture, shaking off any excess flour, and set on a plate. Repeat until all of the rolls have been coated with flour.
  • Heat 2 tablespoons of butter and olive oil in a skillet over medium-high heat. Place chicken thigh rolls in pan and cook until all sides are browned, about 2 minutes per side. Transfer rolls to an oven-safe dish.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Meanwhile, melt remaining 2 tablespoons butter in the skillet over medium heat. Once butter starts to bubble and turn brown, add chopped sage and swirl the pan until sage becomes fragrant. Pour in broth, wine, and lemon juice. Bring sauce to a simmer and reduce heat to low.
  • Transfer chicken rolls back to the skillet and cook in the sauce for about 2 minutes, turning frequently to coat. Plate rolls and spoon sauce over top.

Goat Cheese-Arugula Ravioli with Tomato-Pancetta Butter image

Categories     Leafy Green     Tomato     Goat Cheese     Parmesan     Basil     Bacon     Arugula     Summer     Bon Appétit

Yield Makes 4 to 6 servings

Number Of Ingredients 18

Ravioli
2 tablespoons olive oil
3 large shallots, minced
8 ounces arugula, chopped (about 8 cups)
6 ounces soft fresh goat cheese (such as Montrachet), crumbled
1/2 cup (about 1 1/2 ounces) freshly grated Parmesan cheese
Nonstick vegetable oil spray
42 (about) wonton wrappers (from one 12-ounce package)
2 large egg whites, whisked just until foamy
Tomato-Pancetta butter
6 ounces thinly sliced pancetta* or bacon, coarsely chopped
1/4 cup (1/2 stick) butter
6 large plum tomatoes, quartered, seeds and membranes discarded, tomatoes diced
1 teaspoon chopped fresh thyme
For serving:
5 tablespoons butter, melted
12 fresh basil leaves
Fresh thyme sprigs

Steps:

  • Make ravioli:
  • Heat oil in heavy large skillet over medium heat. Add shallots; sauté 10 minutes. Add arugula; toss until wilted but still bright green, about 3 minutes. Transfer arugula mixture to large bowl and cool. Mix in goat cheese and Parmesan cheese. Season filling with salt and pepper.
  • Line 2 baking sheets with heavy-duty foil; spray foil with nonstick spray. Place 4 wonton wrappers on work surface; cover remaining wrappers with plastic to prevent drying. Lightly brush entire surface of each wrapper with egg white. Spoon 1 generous teaspoon filling into center of each wrapper. Fold wrappers diagonally in half, forming triangles. Press edges firmly to seal. Arrange ravioli on prepared sheets. Repeat with remaining wrappers and filling. (Can be made ahead. Cover with plastic and chill up to 1 day; or cover with plastic, then heavy-duty foil, and freeze up to 1 week. If frozen, do not thaw before cooking.)
  • Make tomato-pancetta butter:
  • Cook chopped pancetta in large skillet over medium-high heat until crisp and brown. Using slotted spoon, transfer pancetta to paper towel; drain. Set aside. Pour off all but 1 tablespoon drippings from skillet. Add butter to drippings in skillet; melt over medium-high heat. Add tomatoes and thyme; sauté until tomatoes are tender, about 5 minutes. Season with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature.)
  • Cook and serve ravioli:
  • Place melted butter in large bowl. Cook half of ravioli in large pot of boiling salted water until just tender, about 4 minutes for fresh or 5 minutes for frozen. Using large strainer, transfer ravioli to colander and drain; place in bowl with butter and toss to coat. Cover to keep warm. Cook remaining ravioli in same pot of boiling water. Drain and add to bowl of buttered ravioli. Toss gently to coat. Divide ravioli among bowls. Rewarm tomato butter over medium heat. Add reserved pancetta and basil; sauté 1 minute. Spoon sauce over ravioli; garnish with thyme.
  • *Pancetta, Italian bacon cured in salt, is available at Italian markets and in the deli case at many supermarkets.

BUCATINI WITH BUTTER-ROASTED TOMATO SAUCE

Bucatini with Butter-Roasted Tomato Sauce image

The garlicky hands-off sauce for this pasta is roasted entirely in the oven, which intensifies the flavor of canned tomatoes.

Provided by Dawn Perry

Yield 4 servings

Number Of Ingredients 8

1 (28-ounce) can whole peeled tomatoes
8 garlic cloves, peeled, crushed
2 anchovy fillets packed in oil
1/4 cup (1/2 stick) unsalted butter, cut into small pieces
1/2 teaspoon crushed red pepper flakes plus more for serving
Kosher salt, freshly ground pepper
12 ounces bucatini or spaghetti
Finely grated Parmesan (for serving)

Steps:

  • Preheat oven to 425°F. Combine tomatoes (crushing them with your hands), garlic, anchovies, butter, and 1/2 teaspoon red pepper flakes in a 13x9" baking dish; season with salt and black pepper. Roast, tossing halfway through, until garlic is very soft and mixture is jammy, 35-40 minutes. Using a potato masher or fork, mash to break up garlic and tomatoes.
  • Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain, reserving 1/2 cup pasta cooking liquid.
  • Return pasta to pot and add tomato sauce and pasta cooking liquid. Cook over medium-high heat, tossing until sauce coats pasta, about 3 minutes. Serve topped with Parmesan and more red pepper flakes.
  • Do Ahead
  • Tomato sauce can be made 4 days ahead. Let cool; cover and chill. Reheat before mixing with pasta.
  • 3 More Ideas for Roasted Tomato Sauce:
  • You may never stir again once you've given this low-maintenance tomato sauce a try. Roasting coaxes depth from canned tomatoes, instilling a long-cooked flavor. A generous amount of garlic and anchovies adds even more character. Here are other ways to use the wonderful sauce beyond pasta:
  • Tomato Soup: Purée with vegetable or chicken stock and a splash of cream for a warming bowl.
  • Omelet: Fold a spoonful inside an omelet along with pieces of smoked mozzarella.
  • Pizza: It is tomato sauce, after all. Spread it on pizza dough and shower with Parmesan. Bake and top with more anchovies, parsley, and lemon zest.

GRILLED FISH WITH A SUN-DRIED BASIL TOMATO BUTTER

Grilled Fish With a Sun-Dried Basil Tomato Butter image

A quick, easy dinner. Make the butter for this ahead of time and then just a quick marinate - grill - and serve. I love this with salmon, grouper, or halibut. The marinade is a bit strong for a mild, tender fish such as flounder or tilapia, but the butter is wonderful. Both the marinade and butter works great on chicken, pork and even steak. When using these proteins, I do marinate a bit longer as they need a bit more time to soak in the flavors. Thirty (30) minutes to 1 hour. Serve this with fresh roasted spaghetti squash and a green salad.

Provided by SarasotaCook

Categories     Savory

Time 35m

Yield 4 , 4 serving(s)

Number Of Ingredients 12

4 fish fillets (you can use salmon, halibut, grouper, any similar fish)
1 teaspoon dried Italian seasoning
1 tablespoon balsamic vinegar
2 tablespoons olive oil
salt
pepper
nonstick cooking spray, to cook the fish in
2 tablespoons sun-dried tomatoes packed in oil, fine chopped
2 tablespoons fresh basil, fine chopped
1/2 cup butter, room temperature (unsalted)
2 tablespoons shallots, minced
1/2 teaspoon minced garlic

Steps:

  • Butter -- Mix the butter, tomatoes, basil, and shallots together in a small bowl, cover and refrigerate. This can easily be done ahead.
  • Fish and Marinade -- Remove the fish from the refrigerator and set on the counter in a small dish. Mix the olive oil, vinegar, and Italian seasoning together in a small bowl and brush on both sides of the fish. Let the fish marinate for 15-20 minutes. This will also let the fish come to room temperature before you cook it.
  • Fish -- I prefer to grill this dish. Inside or outside. But you can also pan sear and even broil. Make sure to season the fish well on both sides with salt and pepper before cooking. Use whichever method you prefer. I lightly oiled my grill pan just with a non stick spray and grill on both sides until golden brown and firm to the touch. I can't give exact cooking times, because each type of fish will be different. You want it opaque, firm and flaky but just once it gets to that point. Fish should not be overcooked.
  • Serve -- Top each fillet with a spoon of the chilled butter. It will melt and give the fish an amazing flavor.
  • Quick cooking couscous and pan seared fresh spinach makes this a 15 minute healthy meal. And don't forget - this is great over steak, chicken or pork. The only difference is - you need to marinate it for a much longer period.
  • ENJOY!

TOMATO BUTTER

Tomato Butter image

Tomato butter has a jam like consistency and a deep, glossy, rich red color. It is sweet and tart, perfectly playing on all the attributes of a good tomato. Try this and you may never go back to ketchup.

Provided by Ambervim

Categories     Low Protein

Time 1h10m

Yield 2 Pints

Number Of Ingredients 3

5 lbs tomatoes, peeled
2 cups sugar
1/2 cup cider vinegar

Steps:

  • Put a small ceramic plate in the freezer. You will use this this to test the jam later.
  • Safely prepare you jars for canning.
  • Chop the tomatoes and place them in a large Dutch oven (optionally see crock pot procedure at the bottom) with the sugar and vinegar. Stir everything together, then turn the heat to medium and simmer until the tomatoes begin to break down and are soft, about 15 minutes. Blend the tomatoes with an immersion blender until you have a smooth puree. Lower the heat and continue simmering the jam, stirring frequently, until the liquid has reduced and the mixture is thick and spreadable. This could take anywhere from 40 minutes to over an hour, depending on how juicy your tomatoes are. As the mixture thinks, stir more often and watch carefully to avoid scorching.
  • When the jam has cooked down and is thickened, spoon a little jam onto the frozen plate. Leave it to set for a minute, tilt the plate. If the jam stays put, or only runs a little bit, it's ready. Also, run a finger through the jam on the plate if the two sides stay separate and don't run back together it is another sign it is ready.
  • When the jam has met the set test, remove it from the heat. Fill your canning jars with jam, leaving a 1/2-inch head space. Wipe the rimes of the jars with a damp paper towel to clean up any sticky spills. Dry the lids with a clean paper towel and place on the jars. Screw on the bands tightly. Use good canning procedure.
  • You can also make this in the slow cooker. To do this, place all the ingredients in the cooker and cook uncovered for 12-14 hours until set. Puree the tomatoes when they are soft.

TOMATO, PEANUT BUTTER AND MAYO SANDWICH

Tomato, Peanut Butter and Mayo Sandwich image

This is a simple sandwich that I have been eating since I was a little kid. I looked to see if I could find it on Zaar, but was not able to. I just had to post it. I know the ingredients seem like a very unlikely combination, but trust me, these sandwiches are really good! They remind me of summer. Please use fresh, ripe tomatoes! It makes a huge difference! I also reccomend using real mayo, not lite, fat free or miracle whip. This is not a low-fat sandwich, but I figure it is fine on occation...like when the tomatoes are ripe from the garden! Enjoy!

SUMMER BEAN SOUP WITH TOMATO BROWN BUTTER

Summer Bean Soup With Tomato Brown Butter image

I set out to create my own version of baked beans. This variation is deeply savory, with anchovies, bacon, and a brown butter-tomato sauce anchoring the flavor.

Provided by Cortney Burns

Categories     Summer     Soup/Stew     Bean     Green Bean     Tomato

Yield 4 servings

Number Of Ingredients 29

Bean Soup:
8 oz. (230 g) dried beans, such as flageolet or navy, or fresh shelling beans
2 in. square dried kombu
2 large tomatoes
2 celery ribs
1 carrot
1 leek, white and light green parts only
6 shallots, skins intact
6 garlic cloves, minced
4 oil-packed anchovy fillets
6 Tbsp. (90 ml) extra-virgin olive oil
2 Tbsp. maple syrup
1 ½ Tbsp. kosher salt
1 Tbsp. red pepper flakes
1 tsp. whole-grain mustard
Baked Beans:
8 oz. (230 g) bacon
8 oz. (230 g) Romano beans or green beans, chopped into 1 in. pieces
2 shallots, thinly sliced
1 tsp. red pepper flakes
Zest and juice of 1 lemon
1 garlic clove, grated
Green Bean Salad:
12 pickled green beans (see Basic Wet Salt Method, below)
9 cherry tomatoes, quartered
2 tsp. extra-virgin olive oil
1 tsp. sherry vinegar
Tomato Brown Butter
Crumbled feta, parsley leaves, and marjoram leaves for garnish

Steps:

  • To make the soup:
  • Combine the dried beans and kombu in a large container and cover with plenty of water to soak for at least 4 hours or overnight; skip this step if using fresh beans.
  • Drain the beans and kombu and add them to a large pot with enough water to cover by about 1 in. (if using fresh beans, add the kombu now). Bring to a boil over medium-high heat; meanwhile, halve the tomatoes and cut the celery, carrot, and leek into about 3 in. pieces. As soon as the water boils, decrease the heat to medium-low and add the vegetables to the pot, along with the whole shallots and minced garlic. Continue to cook at a gentle simmer until the beans are very creamy, 60 to 90 minutes for dried beans and about half that for fresh.
  • Remove the pot from the heat and use a slotted spoon to reserve the tomatoes; remove and discard the other vegetables.
  • Set up a sieve over a heat proof container and strain the beans (there should be about 3 cups or 480 g), reserving all the cooking liquid.
  • In a blender, combine 1 cup (160 g) of the cooked beans with 2 cups (480 ml) of the cooking liquid, plus the tomatoes, anchovies, oil, maple syrup, salt, red pepper flakes, and mustard. Purée until extremely smooth, pour into a large bowl, and fold in the reserved cooked beans by hand. At this point, you can serve it right away or transfer to an airtight container and refrigerate for up to 3 days, gently rewarming over medium-low heat when you're ready to serve.
  • To make the baked beans:
  • While the bean soup is cooking, preheat the oven to 325°F. Cut the bacon into ¼ in. lardons; reserve 3 whole beans for garnish and cut the rest into 2 to 3 in. pieces.
  • In a medium saucepan or Dutch oven, spread the bacon in an even layer and cook over medium-low heat until it starts to turn golden and crisp, about 10 minutes. Use a slotted spoon to remove the pieces but leave the fat behind.
  • Increase the heat slightly, and sauté the shallots until translucent, 5 to 10 minutes. Stir in the chopped beans, bacon, and red pepper flakes. Cover with a lid or a tight layer of foil and bake until the beans are very soft, 60 to 90 minutes. Stir in the lemon zest, juice, and garlic as soon as the beans come out of the oven and cover again; the residual steam will cook the garlic.
  • To make the salad:
  • Thinly slice the pickled green beans on the bias. Combine with the cherry tomatoes, oil, and vinegar.
  • To serve, ladle the bean soup into bowls with a big spoonful of the baked beans on top. Garnish with the pickled green bean mix, a swirl of tomato brown butter, crumbled feta, and torn fresh herbs. Leftovers can all be refrigerated in separate airtight containers, though the green bean salad is best on the day it's made, when the beans are most crisp and the tomatoes are fresh.
  • Basic wet salt method:
  • This works for any amount of dense vegetables or dense, underripe fruit, either whole or cut up, such as carrots, turnips, beets, winter squash, onions, green beans, Brussels sprouts, green tomatoes, small apples, underripe peaches, and whole baby cabbages. Peel off any tough skins, such as on beets, winter squash, and onions, and trim the tops. Leave the vegetables whole or cut them into the desired finished shape. Place the vegetables in a nonreactive container and pour water to completely submerge them; as you do so, keep track of how much water you're adding since the amount of water will dictate the amount of salt (generally 3.5 percent salt by weight of the water for most vegetables, although cucumbers can handle 4 to 5 percent and the increased salt assists with keeping their texture crispy). With a long wooden spoon, stir kosher salt into the brine (or add the salt, cap the jar, and give it a hearty shake) until the salt is dissolved. Place a weight on top of the vegetables to keep them submerged in the brine. Seal the container, using a lid with an airlock if you have one. If you don't have an airlock, you'll just need to open the container every few days or so to release carbon dioxide buildup and check for mold. Place the container in a clean, low-light area with an ambient temperature of 60°F to 68°F until the pickles taste sour, about 3 weeks. Refrigerate indefinitely.

BUTTER BEAN TOMATO SALAD

Butter Bean Tomato Salad image

"I make this simple salad often for summer barbecues," writes Denise Neal of Castle Rock, Colorado. "People always like it and ask for the recipe. It can be made a day ahead and kept in the fridge. And it's good served cold or at room temperature." TIP: Use care when tossing the salad with the dressing to prevent the tender butter beans from getting crushed.

SEARED OPAH WITH VINE-RIPE TOMATO GARLIC BUTTER

Seared Opah with Vine-Ripe Tomato Garlic Butter image

It's my understanding that Opah (moonfish) isn't easy to come by, so I was thrilled when I found some. Then I discovered that there are not many recipes out on the internet, so recipes are also hard to come by. I found this one and we loved both the fish and the recipe. I also had to search for a recipe for the Tomato Concasse,...

Provided by Vicki Butts (lazyme)

Categories     Fish

Time 30m

Number Of Ingredients 13

1 lb opah, cut into 3-ounce fillets
olive oil
2 Tbsp garlic, finely minced
1 Tbsp lemon juice
3 Tbsp white wine
2 Tbsp parsley, chopped
1 lb unsalted butter, cut into cubes, room temperature
salt and pepper, to taste
shredded parmesan cheese
TOMATO CONCASSE:
1 lb vine ripened tomatoes
2 shallots, minced
4 Tbsp unsalted butter

Steps:

  • 1. Make the Tomato Concasse: (The French word means to roughly chop).
  • 2. Remove the core of the tomato with the tip of a small knife.
  • 3. At the other end, lightly score (just break the skin) of the tomato by cutting an X.
  • 4. Plunge the tomatoes into a pot of rapidly boiling water for 10 seconds (blanch).
  • 5. Remove the tomatoes with a slotted spoon and place into a bowl of ice water or under cold running water to halt the cooking process (this process is called 'refreshing').
  • 6. The peel should now just slip off; if the tomatoes are not quite ripe, they may need to be blanched and refreshed again.
  • 7. Place the tomatoes on a cutting board with the core side down and cut in half.
  • 8. Remove the seeds with a teaspoon and discard.
  • 9. Roughly chop the tomatoes to the desired size.
  • 10. Gently cook the shallots and the tomatoes in butter without coloring them (this is called sweating) for 5 minutes and set aside until required.
  • 11. For the Fish:
  • 12. Heat the saute pan on medium heat until hot.
  • 13. Add in oil; season both sides of fillets with salt and pepper.
  • 14. Sear on both sides until medium done, approximately 4 - 5 minutes total depending on thickness of fish.
  • 15. Remove from pan; add garlic; stir consistently.
  • 16. Add tomato concasse, lemon juice and white wine on medium heat; let reduce until most liquid is gone.
  • 17. On low heat, add in butter a little at a time.
  • 18. Remove from heat; add in chopped parsley and season.

TOMATO OPEN SANDWICHES WITH PEANUT BUTTER

Tomato Open Sandwiches with Peanut Butter image

The perfect, quick, bachelor-y lunch for when you're hard pressed for time! This healthy recipe includes the 4 main food groups, so tuck in, and double the recipe if you're really hungry! :-)

Provided by Anu_N

Categories     Lunch/Snacks

Time 15m

Yield 1 serving(s)

Number Of Ingredients 5

2 slices whole wheat bread
2 teaspoons natural peanut butter (I use homemade)
1/2 large tomatoes, sliced
2 -4 leaves spinach or 2 -4 leaves lettuce
salt and pepper

Steps:

  • Wash the spinach leaves, shake off excess water, place in a microwave-proof bowl, and microwave on high for 30 seconds or until just wilted.
  • Alternatively, you can omit this step and just have it raw, or use lettuce leaves.
  • Spread the peanut butter evenly over the bread slices.
  • Place 1-2 wilted spinach leaves (or lettuce) over each slice, and top with tomato slices.
  • Sprinkle with salt and pepper.
  • Toast on a grilling rack in the oven (300C) for 5-7 minutes or until the bottom of the bread is slightly brown.
  • Eat immediately, with fresh fruit for a healthy lunch!

Tips:

  • Use ripe, flavorful tomatoes: The quality of your tomatoes will have a big impact on the final flavor of your butter. Look for tomatoes that are deep red and have a slight give when you gently squeeze them.
  • Roast the tomatoes before making the butter: Roasting the tomatoes concentrates their flavor and makes them sweeter. This step is essential for making the best possible tomato butter.
  • Use unsalted butter: This will allow you to control the amount of salt in the butter. You can always add more salt to taste, but it's difficult to remove it if you add too much.
  • Season the butter to taste: In addition to salt, you can also add other seasonings to your tomato butter, such as garlic, basil, thyme, or rosemary. Experiment with different flavors to find your favorite combination.
  • Let the butter cool completely before using: This will allow the flavors to meld and the butter to firm up. You can store the butter in the refrigerator for up to 2 weeks, or in the freezer for up to 3 months.

Conclusion:

Tomato butter is a delicious and versatile condiment that can be used in a variety of dishes. It's perfect for spreading on bread, crackers, or vegetables. You can also use it to add flavor to pasta, rice, or grilled meats. With its bright, tangy flavor, tomato butter is sure to become a favorite in your kitchen.
