Yield 4 servings

Number Of Ingredients 10

2 tablespoons olive oil
1 tablespoon minced garlic
1 tablespoon grated ginger
1 cup diced onion
1 28-ounce can crushed Italian plum tomatoes
1 tablespoon sugar
1 tablespoon fine sea salt, or to taste
1/2 teaspoon red chile flakes, more to taste
Pinch of cayenne pepper
4 ounces good-quality fresh goat cheese, such as Vermont Creamery

Steps:

  • Put oil in a large saucepan over medium-high heat. When it shimmers, add garlic and ginger and sauté until just fragrant, 1 to 2 minutes. Add onion and continue cooking until soft and translucent, about 5 minutes.
  • Add tomatoes, sugar, salt, chile flakes, cayenne and 1 cup water. Reduce heat to medium-low and simmer for 30 minutes or until flavors have melded. Using an immersion blender, purée soup until smooth. Add goat cheese and stir well until mixture is creamy but with a few evident crumbles of cheese. Ladle into bowls and serve.

TOMATO BISQUE

Categories     appetizer

Time 1h

Yield 4 to 6 appetizer servings

Number Of Ingredients 15

4 tablespoons unsalted butter
1 tablespoon minced bacon (about 1/2 ounce)
1 Spanish onion, chopped
1 carrot, chopped
1 stalk celery, chopped
4 cloves garlic, minced
5 tablespoons all-purpose flour
5 cups chicken broth, homemade or low-sodium canned
1 (28-ounce) can whole, peeled tomatoes (with liquid), roughly chopped
3 parsley sprigs
3 fresh thyme sprigs
1 bay leaf
1 cup heavy cream
1 3/4 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Heat the butter in a large soup pot over medium-high heat. Add the bacon and cook, stirring, until crisp and most of the fat has rendered, about 1 minute. Using a slotted spoon, transfer the bacon to a paper towel-lined plate and set aside. Lower the heat to medium, add the onion, carrots, celery, and garlic and cook, covered, stirring occasionally, until soft and fragrant, about 8 minutes.
  • Stir in the flour and cook, stirring, for 3 minutes. Pour in the broth and tomatoes and bring to a boil while whisking constantly. Tie the parsley sprigs, thyme, and bay leaf together with a piece of kitchen twine and add to the pot. Lower the heat and simmer for 30 minutes. Remove from the heat and allow to cool.
  • When the soup base is cool, remove and discard the herb bundle. Working in batches, transfer the mixture to a blender and puree until smooth. Using a sieve over a large bowl, strain the tomato puree. Return the puree to the pot and reheat over medium heat.
  • Whisk the heavy cream and salt into the soup and season with pepper to taste. Divide among warm soup bowls, garnish with the crispy bacon, and serve immediately.

Tips:

  • Use ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the flavor of your tomato bisque. Choose ripe, in-season tomatoes that are packed with flavor.
  • Roast the tomatoes: Roasting the tomatoes intensifies their flavor and adds a touch of smokiness. You can roast the tomatoes in the oven or on a grill.
  • Use a good quality broth: The broth is another important ingredient in tomato bisque. Choose a broth that is flavorful and has a rich body. You can use chicken broth, vegetable broth, or even a combination of the two.
  • Add some cream: Cream adds richness and creaminess to tomato bisque. You can use heavy cream, half-and-half, or even milk. If you are using milk, be sure to add it slowly so that it doesn't curdle.
  • Season to taste: Season the tomato bisque to taste with salt, pepper, and other herbs and spices. You can also add a touch of acid, such as lemon juice or white wine vinegar, to brighten the flavor.
  • Garnish with fresh herbs: Fresh herbs, such as basil, thyme, or oregano, add a pop of color and flavor to tomato bisque. Garnish the soup with fresh herbs just before serving.

Conclusion:

Tomato bisque is a delicious and versatile soup that can be enjoyed for lunch, dinner, or even as a snack. It is a great way to use up fresh tomatoes, and it is also a good source of vitamins and nutrients. With a few simple tips, you can make a tomato bisque that is sure to impress your family and friends.
