4 medium onions, chopped

3 cans (28 ounces each) diced tomatoes, drained
2 cans (6 ounces each) tomato paste

4 celery ribs, chopped
2 tablespoons minced fresh parsley
1 tablespoon salt
1 tablespoon Italian seasoning
2 to 3 teaspoons dried rosemary, crushed

SHEPHERD'S PIE:
3 cups warmed mashed potatoes (prepared with added milk and butter), divided
2 medium carrots, grated
1/4 pound fresh mushrooms, chopped
1 tablespoon onion soup mix
2 tablespoons grated Parmesan cheese

  • In a Dutch oven, cook the beef, onions and garlic over medium heat until meat is no longer pink; drain. 9 potatoes - peeled and cubed
1 ½ pounds ground beef
1 (6 ounce) can tomato sauce
2 tablespoons chopped fresh parsley
1 dash Worcestershire sauce
½ teaspoon salt
½ teaspoon ground black pepper
2 (15 ounce) cans green beans, drained
2 tablespoons all-purpose flour
2 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the potatoes and water to cover in a large pot over high heat. Boil for 15 minutes. Meanwhile, brown the ground beef in a large skillet over medium high heat; drain excess fat.

1 medium onion, diced
3 medium carrots, peeled and sliced
1 rib celery, sliced
1/2 pound cremini mushrooms, quartered
2 cloves garlic, minced
1 tablespoon kosher salt
3/4 teaspoon dried oregano
3 tablespoons tomato paste
1 pound ground beef
1/4 cup canned low sodium beef broth
1/2 teaspoon Worcestershire sauce
Freshly ground black pepper
4 cups Mashed Potatoes, recipe follows
1/4 cup grated Parmesan, optional
1 1/2 pounds russet potatoes, peeled quartered
2 teaspoons kosher salt, plus more for seasoning
3/4 cup whole milk
6 tablespoons unsalted butter
2 tablespoons chopped fresh flat-leaf parsley
Freshly ground black pepper

  • Preheat oven to 375 degrees F.
  • Heat the olive oil and 2 tablespoons of the butter in a large skillet over medium heat. Add the onion, carrots, celery, mushrooms, garlic, half the salt, and oregano. At the same time, combine the milk and butter in a small saucepan and warm over low heat until the butter is melted. Remove from the heat and cover to keep warm.
