1 lb rotini pasta
2 lbs plum tomatoes or 2 lbs roma tomatoes, diced
3 -4 cloves garlic, minced
1 teaspoon salt
black pepper, to taste
1/2 cup olive oil
fresh basil leaf, chopped,to taste (I use about 1/3 cup)
1/4 cup grated parmesan cheese (fresh is best)

Steps:

  • Mix together the tomatoes, garlic, salt, pepper, olive oil, and basil.
  • Refrigerate 2 hours.
  • Meanwhile, cook pasta according to package directions, and rinse under cold water; drain.
  • Mix pasta with tomato mixture until well-combined.
  • Sprinkle with Parmesan cheese.
  • Serve with additional Parmesan, if desired.

8 ounces rotini pasta or 8 ounces penne pasta
6 ounces fresh green beans, trimmed and cut into 1-inch pieces
1/3 cup olive oil
1/4 cup white balsamic vinegar
1/2 teaspoon salt
2 garlic cloves, minced
1/4 teaspoon dry mustard
1/4 teaspoon ground black pepper
3 medium tomatoes, cut into thin wedges (about 1 pound)
3/4 cup finely shredded paarmesan cheese (3 ounces)
1/2 cup sliced ripe olives
1/2 cup finely shredded fresh basil
parmesan cheese, shaved, for topping (optional)

Steps:

  • Cook pasta according to package directions, adding green beans the last 5 minutes of cooking; drain. Rinse with cold water; drain again.

8 ounces rotini pasta or 8 ounces any similarly shaped pasta
salt
8 ounces mozzarella cheese, cut into 1/4- to 1/2-inch dice
3/4 lb plum tomato, peeled, seeded ad cut into 1/4- to 1/2-inch dice*
10 -12 large basil leaves, coarsely chopped
2 scallions, white and tender green parts, finely chopped
1/4 cup extra virgin olive oil
2 teaspoons balsamic vinegar (or more)
salt
fresh ground black pepper

Steps:

  • In a large pot of boiling salted water, cook the pasta until it is done, but still a little firm to the bite. Drain and rinse with cold water until the pasta is completely cool. Let it drain for a few minutes and transfer to a large bowl. Add the mozzarella, tomatoes, basil, scallions, olive oil and balsamic vinegar. 1 lb fresh asparagus
1 cup bottled lemon vinaigrette
1 (1 ounce) package fresh basil, chopped
1 pint grape tomatoes, halved

6 tablespoons extra-virgin olive oil, divided, plus more for drizzling
8 medium cloves garlic, thinly sliced
2 pints mixed cherry and/or grape tomatoes
Kosher salt and freshly ground black pepper
15-20 basil leaves, torn
3/4 pound fresh mozzarella, cut into 1/2-inch cubes (optional)

Steps:

  • 1.In a pot of salted boiling water, cook pasta until very tender throughout, 2 to 3 minutes longer than al dente stage according to package. Drain in a colander, then chill under cold running water. Let drain well, then drizzle lightly with olive oil and toss to coat. Set aside. 2.Meanwhile, in a medium skillet, heat 3 tablespoons olive oil with garlic over medium heat until garlic begins to sizzle lightly. Increase heat to high and add tomatoes.
