PARMESAN CRUSTED CHICKEN BREASTS WITH TOMATO AND BASIL AND POTATOES WITH PEPPERS AND ONIONS

Parmesan Crusted Chicken Breasts with Tomato and Basil and Potatoes with Peppers and Onions image

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 27m

Yield 4 servings

Number Of Ingredients 12

1 1/2 to 2 pounds fingerling potatoes or red skin baby potatoes
1 small red bell pepper, seeded and cut into thin strips
1 Italian mild green pepper, cubanelle, seeded and thinly sliced
1 medium yellow skinned onion, thinly sliced
4 large cloves garlic, cracked away from skin
1 teaspoon crushed red pepper flakes
1/4 cup extra-virgin olive oil, divided
Coarse salt and pepper
2 cups shredded Parmesan, available in tubs near deli -- make sure to get shredded cheese, not grated
4 (6 to 8-ounce) boneless, skinless chicken breasts
4 plum Roma tomatoes or small, vine ripe tomatoes, seeded and chopped
15 to 20 leaves fresh basil, pile leaves, roll then thinly slice -- chiffonade

Steps:

  • Preheat oven to 500 degrees F.
  • Cut fingerling potatoes into halves or quarters, depending on thickness of fingerlings -- thin, small fingerlings may also be left whole, larger potatoes should be quartered to speed cooking process. If you are using small red potatoes, halve or quarter them in the same way.
  • Cover a large cookie sheet with foil. Place potatoes on cookie sheet. Combine with peppers and onions, garlic and crushed red pepper flakes. Coat the potatoes, peppers and onions with extra-virgin olive oil just enough to coat vegetables in a thin layer, 2 to 3 tablespoons. Season liberally with salt and pepper. Place potatoes in the oven and roast 20 to 22 minutes, until potatoes are just tender and peppers and onions are crisp at edges. Toss mixture with tongs, turning the potatoes after 15 minutes. When the potatoes are cooked, transfer them to a serving dish and peel the foil off the cookie sheet and discard for super-quick clean up!
  • While potatoes cook, prepare chicken. Roll out a 2-foot piece of waxed paper or foil near the stove top. Heat a large nonstick skillet over medium high heat -- your pan must be very hot when the chicken is added. Pile the shredded cheese on the work surface created with the waxed paper or foil. Season your chicken breasts with black pepper but no salt; the cheese will add enough salt to the taste of the dish. Press the breasts firmly into the cheese. Coat both sides of breasts with as much cheese as possible. Add 1 tablespoon extra-virgin olive oil to the skillet, 1 turn of the pan. Set breasts into the skillet and cook 7 minutes on each side, until cheese forms an even, golden casing around the tender chicken breasts.
  • While chicken cooks, combine chopped tomatoes with basil in a small bowl. Season with salt and pepper, to your taste.
  • Drain off any excess oil from chicken as you remove it from the skillet. Top chicken with big spoonfuls of raw sauce and serve with potatoes, peppers and onions.

1/8 teaspoon ground black pepper
1/2 cup freshly grated parmesan cheese

1/4 cup shredded fresh basil
1/8 cup sun-dried tomato packed in oil, drained

  • While breasts are cooking make basil cream.

  • Cook until liquid is reduced to 1/4 cup Add cream and return to boil. Cook 8- 10 minute or until sauce is reduced to 1 cup.

  • Cook until heated thoroughly. To thicken sauce add cornstarch mixture slowly.
  • Remove toothpick and cut the chicken breasts in slices to show off the center. Drizzle the chicken with sauce.
  • **Serve this with your choice of pasta and dbl the sauce, or when it's just Dereck and I, I only make 2 chicken breasts and there is enough sauce for our pasta.

"Leftover ready-to-serve soup is next day's lunch!" TIP: For a tasty alternative, Alice sometimes substitutes Italian-style veal steaks (chopped and formed breaded veal) for the chicken.

STUFFED CHICKEN BREASTS W/ CHEESE, TOMATO, AND BASIL

STUFFED CHICKEN BREASTS W/ CHEESE, TOMATO, AND BASIL image

Categories     Chicken     Bake

Number Of Ingredients 8

4 bone-in chicken breast halves (14 ounces each)
1/2 cup(s) packed fresh basil leaves
1/3 cup(s) drained oil-packed sun-dried tomato halves, about 8
2 clove(s) garlic , peeled
1 teaspoon(s) finely grated orange zest
Coarse salt and ground pepper
2 ounce(s) Fontina or mozzarella cheese, cut into four pieces
2 teaspoon(s) olive oil

Steps:

  • Preheat oven to 450 degrees. Line a rimmed baking sheet with aluminum foil; set aside. With a paring knife, cut a 1-inch-long slit in thick side of each breast. Insert knife, and without enlarging opening, carefully work around inside to form a pocket (make sure you do not go through the other side). On a cutting board, pile basil, sun-dried tomatoes, garlic, zest, 1 teaspoon salt, and 1/4 teaspoon pepper; finely chop. Divide mixture evenly, and spoon into breast pockets, spreading it around. Insert one piece of cheese in each breast pocket. Close pockets, using 2 to 3 toothpicks per breast; arrange, skin side up, on baking sheet. Rub with olive oil, and season generously with salt and pepper. Roast until well browned and an instant-read thermometer inserted in thickest part of breast (avoiding bone) reads 165 degrees, 30 to 35 minutes. Let chicken rest 5 minutes; remove toothpicks before serving.

Tips:

  • To ensure that the chicken breasts remain juicy and flavorful, it is crucial to not overcook them. An internal temperature of 165°F (74°C) is the ideal doneness for chicken, and using a meat thermometer is highly recommended to accurately measure the internal temperature.
  • If you prefer a crispy, golden-brown crust on your chicken breasts, you can increase the cooking time in the oven by 5-7 minutes, keeping a close eye to prevent burning.
  • Feel free to experiment with different types of cheese for the filling. Mozzarella, cheddar, and Parmesan are all great options that provide distinct flavors and textures.
  • For a healthier variation, you can use whole wheat or multigrain bread crumbs instead of regular bread crumbs.
  • To save time and effort, you can use store-bought pesto sauce instead of making it from scratch. However, homemade pesto offers a more vibrant and authentic flavor.
  • If you don't have fresh basil leaves on hand, you can use dried basil. However, fresh basil provides a more intense flavor and aroma.

Conclusion:

This versatile tomato basil chicken recipe offers a delightful combination of flavors and textures that is sure to satisfy your taste buds. Whether you prefer pan-frying or baking, both methods result in tender, juicy chicken breasts filled with a flavorful pesto and cheese filling. Experiment with different types of cheese and add-ins to create a customized dish that suits your preferences. Serve it as a main course with your favorite sides or slice it up for a delicious sandwich or wrap. This recipe is not only easy to make but also packed with protein and essential nutrients, making it a wholesome and satisfying meal option for any occasion.
