1 (14 1/2 ounce) can of red gold diced tomatoes, juice and all
1 (14 1/2 ounce) can of red gold tomato sauce
2 cups egg noodles (I use the no-yolk type)
1 package smoked sausage, cut into bite size pieces
1/4 cup margarine or 1/4 cup butter

  • In a mixing bowl, combine the first three ingredients.
  • Place in buttered baking dish.
  • Place cut sausage on top of noodles and tomato mixture.

1 teaspoon butter
1 teaspoon olive oil
3 cups elbow macaroni
1 pound smoked beef sausage, cut into bite-size pieces
2 (14.5 ounce) cans stewed tomatoes, chopped, juices reserved
1 sweet onion, diced small
2 ounces shredded sharp Cheddar cheese
2 ounces shredded Monterey Jack cheese
2 teaspoons olive oil, or more to taste
1 teaspoon dried parsley flakes
¼ teaspoon onion powder, or more to taste
¼ teaspoon garlic powder, or more to taste
salt and ground black pepper to taste
1 (8 ounce) package shredded American cheese (such as Kraft® Melts)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.

1 tablespoon oil or 1 tablespoon butter
1 cup green tomato, cut in 1/2 inch pieces
1 medium onion, coarsely chopped
2 small green chilies, sliced (optional)
1 clove garlic, minced (optional)
1 large carrot, sliced or chopped
1 tablespoon chopped parsley
8 ounces smoked sausage, thinly sliced
1 cup rice
2 cups chicken broth

Steps:

  • Saute onion, green tomato, chilies, carrot and garlic in oil or butter for a few minutes.
  • Transfer to a 2 1/2 quart casserole sprayed with no-stick spray or lightly buttered.
  • Stir in rice, sausage and parsley.
  • Heat broth to boiling and add to casserole.

3 sausage
2 slices smoked bacon
1 onion
1/4 head celery
2 courgettes
2 garlic
1 tablespoon sun-dried tomato pesto
1 tablespoon tomato puree
plenty herbes de provence
2 large tomatoes
plenty paprika

  • Fry sausage, bacon, veg and garlic.
  • Add pesto, puree, herbs, toms and paprika.
  • put in casserole dish with a little water.
  • Put in oven at 180-200 degrees C and cook for at least 1 hour.

Olive Oil
1 Onion
1 Garlic Clove
Diced peppers (approx 3 whole peppers)
Italian Herbs (oregano, basil, Italian seasoning)
200g Smoked Sausage (Mattessons Smoked Pork Sausage)
400g Tin of Chopped Tomatoes
Tomato Puree
1 tsp sugar
Pasta
Parmasan Cheese

Steps:

  • Dice onion and the garlic. Heat a pan with some of the Olive Oil (roughly 1tbs). Add the onion, peppers and 1 tsp each of Italian herbs mix through. Cook for 5 minutes until the onion is soft and slightly translucent. Add the garlic and stir through, cook for a further 5 minutes.
  • Meanwhile slice the Smoked Sausage. Add to the mixture and stir through, cook for 5 minutes. Add the 400g tin of chopped tomato and stir through. Add a good squeeze of tomato puree and 1tsp sugar. Mix through. Bring to the boil then reduce the heat and simmer for 30 minutes. Taking care not to let the mixture dry out, stir occasionally to make sure its not sticking to the bottom of the pan and add spoonfuls of water if needed.
  • While the sauce is cooking, measure out 75g per person of pasta (penne, fusilli, rigatoni, etc). Bring a pan of water to the boil (with a tsp of salt) and add the pasta and cook as per the packet instructions.
  • Serve the pasta with the sauce over the top and grate some parmasan over it. Can serve with garlic bread or salad.

1 1/2 cups milk
1 lb pasteurized processed cheddar cheese, cut into cubes
1 (14 1/2 ounce) can Rotel Tomatoes
12 ounces uncooked elbow macaroni
1/4 cup grated parmesan cheese

Steps:

  • Preheat oven to 350°F.
  • Grease a 2 quart shallow casserole.
  • Heat water for the macaroni.
  • Brown sausage in a large skillet, breaking up the sausage with the side of a spoon as it cooks.
  • Pour into a colander to drain.
  • Add the milk and processed cheese to the skillet, cook and stir over low heat until the cheese is melted.
  • Stir in the sausage and tomatoes and remove from the heat.
