Time 40m

Yield 6

Number Of Ingredients 14

1 tablespoon olive oil
½ cup chopped onion
1 teaspoon minced garlic
1 pound kielbasa sausage, sliced
1 (14.5 ounce) can Italian-style diced tomatoes
1 (4 ounce) can sliced mushrooms
1 teaspoon white sugar
1 teaspoon balsamic vinegar
kosher salt and ground black pepper to taste
1 pinch crushed red pepper, or to taste
1 (16 ounce) package penne pasta
1 cup frozen peas
3 leaves fresh basil, julienned, or more to taste
1 cup shredded Cheddar-Monterey Jack cheese blend

Steps:

  • Bring a large pot of lightly salted water to a boil for pasta.
  • Meanwhile, heat olive oil over medium-high heat in a deep skillet. Add onion and garlic to the hot oil and saute just until tender, about 5 minutes. Add kielbasa to the skillet and cook and stir until browned, 3 to 4 minutes. Stir in tomatoes, mushrooms, sugar, balsamic, salt, black pepper, and red pepper. Reduce heat and let sauce simmer while you cook pasta.
  • Add penne to the pot of boiling water and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes, stirring peas into pasta during last 2 minutes of cooking time.
  • Drain pasta and transfer to sauce. Stir to combine and add basil. Heat over medium-low heat so pasta can absorb liquid from sauce, about 5 minutes. Stir in Cheddar-Monterey Jack cheese and serve.

TOMATO KIELBASA PENNE

Tomato Kielbasa Penne image

One of my favorite easy fix dinners. The recipe originally came from the back of a kielbasa package years ago but I doctored it up with many different ingredients to make it my own. Everyone in my house loves it.

Categories     One Dish Meal

Time 25m

Yield 3 serving(s)

Number Of Ingredients 10

2 tablespoons olive oil
1 medium onion (diced)
2 cloves garlic (diced)
1 package of fully cooked Polish kielbasa or 1 package lite turkey kielbasa (sliced)
1 (14 ounce) can diced tomatoes
1 (14 ounce) can tomato sauce
18 ounces penne pasta
1 teaspoon oregano
1 teaspoon parsley
1 teaspoon white vinegar

Steps:

  • Cook penne pasta as directed in separate pot.
  • In a large skillet add olive oil, onion, garlic, and sliced kielbasa over cook over medium heat until onions are tender.
  • Stir in diced tomatoes (undrained), tomato sauce, oregano, parsley, vinegar, and cooked pasta.
  • Cover and simmer for 15 minutes.
  • Serve topped with parmesan cheese, if desired.

Tips:

  • Select the ripest tomatoes: Look for tomatoes that are deep red and free of blemishes. Avoid tomatoes that are bruised or have soft spots, as these will not yield the best flavor.
  • Use high-quality kielbasa: Choose kielbasa that is made with a blend of pork and beef for the best flavor. Avoid kielbasa that is made with too much filler, as this will make the dish less flavorful.
  • Don't overcrowd the pan: When cooking the kielbasa, make sure to not overcrowd the pan. This will prevent the kielbasa from cooking evenly and will result in a less flavorful dish.
  • Use a good quality shortcake mix: When making the shortcakes, be sure to use a good quality shortcake mix. This will ensure that the shortcakes are light and fluffy.
  • Don't overcook the shortcakes: When baking the shortcakes, be sure to not overcook them. Overcooked shortcakes will be dry and crumbly.

Conclusion:

This tomato and kielbasa shortcake recipe is a delicious and easy-to-make meal that is perfect for a summer cookout or potluck. The combination of sweet tomatoes, savory kielbasa, and fluffy shortcakes is sure to please everyone at the table. With a few simple tips, you can make this dish even more flavorful and delicious.
