From a cool pasta cookbook I found at a thrift store, this looks fantastic. (I added the garlic though!) I'm sure macaroni or orzo would also be great in this soup.

Tips:

  • Use canned tomatoes: Fresh tomatoes can be used, but canned tomatoes are more flavorful and easier to work with.
  • Use a good quality olive oil: Olive oil is the key to a flavorful soup. Look for an extra virgin olive oil that is made with fresh olives.
  • Don't overcrowd the pot: If you overcrowd the pot, the pasta will not cook evenly and the soup will be too thick.
  • Cook the pasta al dente: Al dente pasta is cooked through but still has a slight bite to it. This will prevent the pasta from becoming mushy in the soup.
  • Season to taste: Add salt, pepper, and other seasonings to taste. You may also want to add a pinch of red pepper flakes for a little spice.

Conclusion:

This tomato and ditalini soup is a quick and easy meal that is perfect for a weeknight dinner. It is also a great way to use up leftover tomatoes. The soup is flavorful, comforting, and sure to please the whole family. So next time you are looking for a quick and easy meal, give this tomato and ditalini soup a try.
