1 1/3 Cups - Water ((warm))
4 Tablespoons - Butter ((sliced))
3 Cups - Bread Flour
1 Cup - One Minute Oatmeal
1 Teaspoon - Salt
1/4 Cup - Dark Brown Sugar
1 1/2 Teaspoon - Bread Machine Yeast
4 Tablespoons - Bacon Bits

Steps:

  • Bread Machine settings - 2 pound loaf, light color and "basic" bread setting.
  • Unplug bread machine and remove bread pan.
  • Add all ingredients (except the bacon bits) starting with the water into the bread machine "bucket" (loaf pan). Place the bread machine yeast in last and the yeast should not touch the water (until the bread machine is turned on and the ingredients start to be mixed together).
  • Place the bread pan back into the bread machine and plug in bread machine.
  • Enter the correct settings (2lb, light color and basic) and press "start" button.
  • After the bread machine has finished its FIRST kneading cycle, add the bacon bits. You can add them with the other ingredients but the bacon bits will be more broken up and very small if they go through two kneading cycles. Wear oven mitts.
  • After the bread machine has finished its FINAL kneading cycle and before the baking cycle starts, gently sprinkle on some bacon bits on top of the dough. Wear oven mitts.
  • After the bread machine has finished baking the bread, remove the bread and place it on a cooling rack. Use oven mitts when removing the bread machine container as it will be very hot!
  • In our Sunbeam bread machine, the baking takes about 3 hours for a 2 pound bread at the light color & basic bread settings. However, some machines can differ and you don't want to be away from home when the bread machine "finished" alarm goes off! Your bread machine should show you the length of the baking time after you have entered the settings into the machine. This will allow you to know when to be in the kitchen in order to remove the bread.

1 cup whole milk, warmed in microwave (take care not to boil!)
2 tablespoons olive oil
1 egg
6 tablespoons tomato paste
1/4 cup bacon, cooked, well-blotted and chopped fine
2 tablespoons sun-dried tomatoes, finely chopped
1 lb bread flour (a bit more than 3 cups)
1 teaspoon salt
2 tablespoons sugar
2 teaspoons dried onion (heaping spoons)
2 teaspoons Italian herb seasoning (heaping spoons)
1/2 teaspoon garlic powder
1/2 teaspoon ground nutmeg
2 teaspoons bread machine yeast (heaping spoons)

Steps:

  • Add all ingredients to bread machine pan in order given, unless directed otherwise by your machine's manufacturer. Bake on regular bread setting, light or medium color. For best loft and texture, remove immediately after baking cycle is complete (rather than let it auto-cool in the machine) and cool on wire rack. Makes a tall, 1 1/2 pound loaf.
  • Tips for success:.
  • I prefer to measure my flour by weight because it's more accurate and MUCH easier/faster.
  • I've found that if I lie the slices of bacon on top of each other and slice them first into long strips then chop them into bits, it goes a LOT faster than just haphazardly chopping them. You get much more even bits much faster.
  • The single best key to successful bread machine baking is to babysit your doughball is it's forming. Let the machine work until the doughball forms, then let it work five more minutes and have another look at your doughball. Have some extra flour or extra milk handy should you need to adjust the moisture. Your doughball should be just formed enough that the paddle isn't smushing through the bottom of the ball, but not so dry that the ball just spins without touching the walls. (If it's really way too dry, the doughball won't form at all!) The optimal texture is a ball that spins but also smacks the walls of the pan, too. Once you have a firm grasp on what the optimal doughball looks like, and the basic proportions of liquid/flour/salt/sugar/yeast, you're free to wing it with recipes and invent your own.

1 cup stone-ground cornmeal
2 3/4 cups whole milk
Kosher salt
2 teaspoons sugar
Pinch of cayenne pepper
2 cups corn kernels (from 2 ears corn)
4 scallions, finely chopped
4 large eggs
1 1/2 teaspoons baking powder
1 pound tomatoes, chopped
2 tablespoons extra-virgin olive oil
3 tablespoons chopped mixed fresh herbs
Kosher salt and freshly ground black pepper

Steps:

  • Position a rack in the lower third of the oven and preheat to 325 degrees. Prepare the spoon bread: Cook the bacon in a skillet until just crisp; transfer to a paper-towel-lined plate with a slotted spoon, leaving the drippings in the pan. Grease a 6-cup shallow baking dish with some of the drippings and dust with 2 teaspoons cornmeal. Place on a baking sheet.
  • Add the milk to the remaining drippings in the skillet and bring to a boil over high heat. Whisking constantly, gradually pour in the remaining cornmeal. Add 1 teaspoon salt, the sugar and cayenne. Lower the heat and simmer, whisking, until thickened, about 3 minutes. Stir in the corn, scallions and bacon; remove from the heat.

1 tablespoon vegetable oil
1 onion, chopped
1 cup chopped bacon

1 Tbsp olive oil, extra virgin
1 small onion, chopped
1 large tomato, peeled, seeded and chopped (about 6 to 7 ounces)
1 Tbsp basil paste (or same amount of fresh chopped)
4 1/2 c bread flour
1/2 tsp fresh ground black pepper
1 1/2 tsp salt
2 tsp sugar
1 tsp rapid-rise active dry yeast
GLAZE
1 large egg yolk, disgard white or use in another recipe
1 Tbsp water

Steps:

  • 1. NOTES: I keep making this bread and finding ways to improve the process. This bread was tricky for the bread machine but I will continue to use the machine. I used the dough cycle and found that I needed to add more water at the beginning because it just seemed to dry. About 1/4 to 1/2 cup water should do it. Since making again, when the machine is on last knead, I add the veggie ingredients. This made the dough too wet, so I added more flour, adding a little at a time until it seemed to be the right consistency. Even with the extra work involved, this bread is my all time favorite and I will continue to make it.
  • 2. In a small frying pan heat olive oil over a moderate heat. Once hot, add onions; fry for 3 to 4 minutes until light golden color.
  • 3. Add tomatoes and basil; cook an additional 2 to 3 minutes until tomatoes are softened.
  • 4. Remove from heat; drain through a sieve placed over a bowl to catch juice. NOTE: Juice will be used so don't toss. Press mixture gently with back of spoon to extract as much juice as possible. Set tomato mixture aside as well as the juice.
  • 5. Add water to the reserved juice to make 1 1/4 cup liquid.
  • 6. Pour liquid into bread pan.
  • 7. Add flour, ensuring that the liquid is covered. Add pepper, salt and sugar in separate corners in the bread pan.
  • 8. Make a shallow indentation in the center of the flour; add yeast.
  • 9. Set machine to dough cycle; press start. NOTE: I used the 2 lb loaf setting. Not really sure if that matters since I only used the dough setting. Press start. NOTE: check to make sure dough is moist enough; add additional water if needed soon after you start the machine. I found I needed to add extra water.
  • 10. Lightly grease a 9 x 5-inch loaf pan; set aside.
  • 11. When dough cycle is complete; remove dough and place on a lightly floured surface. Punch down gently.
  • 12. Knead in reserved tomato mixture. You may need to add extra flour if dough is too moist. NOTE: See note in step 1. I am now added the tomato mixture into the bread maching during last kneading. Totally up to you.
  • 13. Flatten the dough and shape into a 1 inch thick rectangel. Fold the side to the middle and press down the edge to seal. Make a hollow along the center and found in half again. Gently roll into a loaf about 16-inches long. Shape into an "S" shape and place in prepared pan. Cover with oiled plastic wrap and set aside in a warm place to rise for 35 to 40 minutes. Meanwhile preheat oven to 400 degrees.
  • 14. Make a glaze by mixing egg yolk and water together. Brush over top of bread. Bake in preheated oven for 35 to 40 minutes.
