Provided by Patricia Wells

Categories     HarperCollins     Salad     Bacon     Lettuce     Tomato     Avocado     Blue Cheese     Lunch     Sugar Conscious     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added

Yield Serves 4

Number Of Ingredients 8

2 1/2 ounces smoked bacon, rind removed, cut into matchsticks (3/4 cup)
1 head iceberg lettuce, chopped (4 cups)
2 ripe heirloom tomatoes, cored, peeled, seeded, and chopped
1 large ripe avocado, halved, pitted, peeled, and cubed
4 ounces chilled blue cheese (preferably Roquefort), crumbled (1 cup)
4 small spring onions or scallions, white part only, trimmed, peeled, and cut into thin rounds
Yogurt and Lemon Dressing
Coarse, freshly ground black pepper

Steps:

  • In a large, dry skillet, brown the bacon over moderate heat until crisp and golden, about 5 minutes. With a slotted spoon, transfer the bacon to several layers of paper towels to absorb the fat. Blot the top of the bacon with several layers of paper towels to absorb any additional fat. Set aside.
  • In a large, shallow bowl, combine the bacon, lettuce, tomatoes, avocado, cheese, and spring onions. Toss with just enough dressing to lightly and evenly coat the ingredients. Season generously with pepper, and serve.

Tips:

  • Choose ripe, flavorful tomatoes: Vine-ripened tomatoes are the best choice for this salad, as they have a sweeter, more intense flavor. Look for tomatoes that are deep red in color and have no blemishes.
  • Use a variety of avocados: Avocados come in a range of sizes and shapes. For this salad, you can use small, medium, or large avocados. If you're using large avocados, you may want to cut them into smaller pieces.
  • Red onion adds a bit of sharpness to the salad, but you can also use a milder onion, such as a yellow or sweet onion.
  • Fresh cilantro adds a bright, herbaceous flavor to the salad. You can also use parsley or basil.
  • Lime juice is a key ingredient in this salad, as it helps to brighten the flavors of the tomatoes and avocados.
  • Honey or maple syrup adds a touch of sweetness to the salad. You can also use agave nectar or another liquid sweetener.
  • Salt and pepper are essential seasonings for this salad. You can also add a pinch of chili powder or cumin for a bit of extra flavor.
  • Serve the salad immediately after making it, while the avocados are still green and fresh.

Conclusion:

This tomato and avocado salad is a refreshing and flavorful dish that is perfect for a summer lunch or dinner. It is also a healthy and nutritious salad that is packed with vitamins, minerals, and antioxidants. With its simple ingredients and easy preparation, this salad is sure to become a favorite in your home.
