2 tablespoons extra-virgin olive oil
3 tablespoons unsalted butter
1 medium yellow or red onion, finely chopped
2 garlic cloves, smashed
Kosher salt and black pepper
1 medium carrot, chopped
1 rib celery, chopped
1 (28-ounce) can whole peeled tomatoes in juice
1 tablespoon tomato paste
1/2 to 1 cup alphabet pasta (or other very small shaped pasta), depending how hearty you like your soup

Steps:

  • Heat oil and 1 tablespoon butter in a heavy pot over medium heat. Stir in onion and garlic, season with salt and pepper, and cook, stirring often, until onions are softened, about 5 minutes.
