Steps:

1 c grated cheese-your favorite mexican flavor

2 1/4 cups all-purpose flour
1 cup fine cornmeal
1 cup sugar
2 tablespoons baking powder
1 tablespoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup pureed silken tofu (see Cook's Note)
3 tablespoons flaxseeds, finely ground (or 2 1/2 tablespoons flax meal)
1 1/2 cups whole milk
2 teaspoons distilled white vinegar
6 tablespoons coconut oil, liquefied
6 tablespoons (3/4 stick) unsalted butter
3 ounces sharp Cheddar cheese, grated on the medium-hole side of a box grater (about 1 cup)

Steps:

  • Adjust an oven rack to the middle position and preheat the oven to 425 degrees F.
  • Whisk together the flour, cornmeal, sugar, baking powder, salt, and pepper in a medium bowl.
  • Place the silken tofu in a blender and buzz it until smooth.

2 cloves garlic, smashed, peeled and quartered
1 avocado, halved, pitted, peeled and diced
1/2 jalapeno, coarsely chopped with seeds
1/2 onion, coarsely chopped
Juice of 1 lime
1 teaspoon ground cumin
1 teaspoon salt
6 ears fresh corn, shucked
2 tablespoons canola oil, to coat corn
Kosher salt and freshly cracked black pepper
Juice from 3 limes
1 ripe avocado, diced
1 Fresno chile pepper, seeded and finely diced
1/2 small red onion, finely diced
1/2 cup mayonnaise
1 tablespoon hot sauce
1 teaspoon chili powder
1 teaspoon cumin
1/4 cup chopped fresh cilantro
3/4 cup crumbled cotija cheese

Steps:
