TOM THUMB BARS

As a non-fan of coconut and walnuts, in general, I was surprised to find that I LOVE this cookie bar. My step grandmother introduced them to my family and ever since, they've been a staple cookie in the "special holiday collection." Super easy to make and they don't taste coconut-y or like walnuts Just so delicious!

Tips:

  • Use fresh ingredients whenever possible, especially for the lemon juice and zest. Fresh ingredients will give your Tom Thumb Bars the best flavor.
  • Make sure your butter is at room temperature before you start baking. This will help the butter cream together with the sugar and create a smooth batter.
  • Don't overmix the batter. Overmixing can make the bars tough.
  • Bake the bars until they are just set. Overbaking will make them dry.
  • Let the bars cool completely before cutting them. This will help them hold their shape.
