VEGAN ZUCCHINI FRITTERS
Steps:
- Grate the zucchini and then add it to a mixing bowl. Sprinkle over the salt and mix in. Then leave it for 10 minutes. The salt will help release the excess water from the zucchini. Then use your hands to squeeze the zucchini and drain off excess water. Place the squeezed zucchini into another bowl and leave the water behind.
- Once the squeezed zucchini is in a fresh mixing bowl, add in the flour, nutritional yeast, baking powder, crushed garlic and chopped spring onions and mix together. It will be very crumbly.*
- Add in the melted vegan butter and mix into a thick batter.
- Preheat the oven to 210°F (100°C) and place some parchment paper over a grill rack on a baking tray. This is where you'll place your fritters to keep them warm.
- Add 1 Tbsp of olive oil to a frying pan and let it get hot. Once hot, use an ice cream scoop/cookie scoop to scoop out even sized amounts of batter into the frying pan. If you don't have a cookie scoop just use around 1/4 cup for each fritter. Use your spatula to press it down from the top and flatten. Depending on the size of your pan you can cook a few at a time. I was able to do 4 at a time.
- Let it cook for a few minutes and then flip over - around 3 minutes per side. When both sides are nicely browned, then transfer your cooked fritters to the baking tray in the warmed oven to stay warm.
- Add the remaining Tbsp of olive oil to the frying pan and repeat with your next batch.
- Serve with vegan sour cream and chopped spring onions.

TOFU ZUCCHINI PATTIES
These tasty Tofu Zucchini Patties have been adapted from a recipe I found in The Australian Women's Weekly's 'The Health Cookbook'. When I've made them for friends, as a casual luncheon dish, they've always been popular - including with those more conservative diners who had never previously eaten tofu! I've suggested serving them specifically with Greek yoghurt - as that's what I generally use - but I've also served them with tzatziki. If you're looking for a recipe for tzatziki, it's hard to beat Ravenseyes' Recipe #306901 or Recipe #157176. BTW, Australian brown onions are what Americans call yellow onions. The original recipe specified "1 cup packaged breadcrumbs" which I've left in the posted recipe but when I've made these I have used processed fresh breadcrumbs. If you find it easier, you can also process the onion and garlic. I've made the herbs optional as you may prefer some other herb combinations, and if you like your food spicier, feel free to modify the recipe so that it best meets your taste preferences.

ZUCCHINI PATTIES
Found this in a newspaper a few weeks ago by Sherry McCarty, Albuquerque, NM. I only added extra onion and cheese. Marinara Sauce is suggested for an Italian flair. I used Dee514's recipe #30903. This is a very good light meal.

These cheesy zucchini patties are an excellent way to use up that abundance of zucchini from the garden. Serve with a bit of tomato sauce or sour cream dabbed on top.

THE BEST ZUCCHINI PATTIES
I can't for the life of me remember where this recipe came from but I have been making these for about 30 years now. Everyone absolutely loves them. I nearly always double or triple the recipe because we love them as snacks or in our lunch the next day. Go by the recipe and don't add any extra salt as there is enough in the cheese and crackers. Enjoy! P.S. 8-7-09 I have been making this for over 30 yrs. and have never had a problem with watery zucchini. Might just be a climate issue.

Tips:
- Use extra firm tofu. This will help the patties hold their shape better.
- Press the tofu well. This will remove excess moisture and help the patties be less crumbly.
- Add some bread crumbs or oats to the mixture. This will help the patties bind together.
- Don't overmix the mixture. Overmixing can make the patties tough.
- Be gentle when flipping the patties. They can be delicate and easily break.
- Serve the patties with your favorite dipping sauce. Some good options include ketchup, mustard, tartar sauce, or ranch dressing.
Conclusion:
Tofu zucchini patties are a delicious and healthy way to enjoy tofu. They are easy to make and can be served with a variety of dipping sauces. These patties are a good source of protein, fiber, and vitamins. They are also a relatively low-calorie option, making them a good choice for people who are watching their weight. If you are looking for a new and exciting way to cook with tofu, give these patties a try. You won't be disappointed!
