You can add cooked vegetables, leafy greens, beans, cheese or nutritional yeast with the scallions in Step 4, though you may want to increase the seasoning depending on the amount of extras you add. You can also swap in hot sauce, mustard or tahini for the soy sauce and play around with spice combinations, but don't skip the splash of water - it helps the tofu soak up all the flavors. Serve with toast, tortillas, salad or breakfast potatoes.

1 (14-ounce) block firm or extra-firm tofu
1 tablespoon low-sodium soy sauce or tamari
1/2 teaspoon ground turmeric
1/2 teaspoon ground cumin
Kosher salt and black pepper
2 tablespoons canola oil
2 scallions, trimmed and thinly sliced

Steps:

  • Cut the block of tofu in half horizontally as you would a hamburger bun. Pat both pieces dry and wrap in paper towels. If time allows, press the tofu by placing a cast-iron skillet or other heavy object on top of the wrapped tofu for about 30 minutes. (This helps remove moisture so the tofu retains its shape better during cooking.)
  • In a measuring cup or bowl, combine the soy sauce, turmeric and cumin with 2 tablespoons water.
  • Unwrap the tofu and season on all sides with salt and pepper. Heat the oil in a medium skillet over medium-high. Add the tofu blocks and cook until golden brown and crisp on the bottom, 3 to 4 minutes. Flip the tofu and cook until golden brown and crisp on the other side, another 3 to 4 minutes. If the tofu is emitting water, hold the tofu with a spatula and pour the water out of the pan.
  • Lower the heat to medium. Using a spatula or wooden spoon, break up the tofu into chunks. Add the scallions and the seasoning mixture and cook, stirring and continuing to break up the tofu, until absorbed, about 2 minutes. Serve immediately.

3 tablespoons low sodium soy sauce
3 tablespoons nutritional yeast
1 teaspoon onion powder
½ teaspoon ground turmeric
1 cup grape tomatoes, halved
3 cups fresh spinach
4 large flour tortillas
1 avocado, for serving, diced
hot sauce, for serving

Steps:

  • Preheat the oven to 400°F (200°C).
  • Add the potatoes to a baking sheet with a drizzle of olive oil, the paprika, oregano, ½ teaspoon of garlic powder, salt, and pepper and toss until well coated.
  • Bake for 20 minutes, flipping halfway through, until the potatoes are tender.
  • Heat a drizzle of olive oil in a large saucepan over medium heat. Once the oil begins to shimmer, crumble the block of tofu into the pan until it resembles the consistency of scrambled eggs, being careful not to over-crumble because it will continue to break apart as you cook. Cook for 4-5 minutes, until the tofu is slightly golden.
  • Add the soy sauce, nutritional yeast, the remaining 2½ teaspoons garlic powder, the onion powder, turmeric, salt, and pepper and stir until well combined. Add the tomatoes and cook for 4-5 minutes, until the tomatoes become slightly wrinkled. Add the spinach and cook until wilted, 3-4 minutes.
  • To assemble a burrito, add ¼ of the tofu scramble, ¼ of the potatoes, some avocado, and hot sauce to the center of a tortilla. Fold in the sides and roll up, keeping the filling tucked in place. Repeat with the remaining ingredients. Cut in half and serve.

Another favorite from La Dolce Vegan...I like to make extra...it keeps well in the fridge all week...then I use it again and again for different things when I am feeling lazy. I like to take left-overs of this and put it in with sliced pan-fried potatoes, just when the potatoes are almost done cooking...yum! Makes great egg sandwiches, too! I like to slice cherry tomatoes in half instead of using big tomatoes, as the little ones are more dependable flavor-wise all year long. I like to add the tomatoes a few minutes before cooking is done, just so they get a bit cooked and shriveled...just my preference. Oh, and drain, drain, drain that tofu before you use it, as always!!!

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until parboiled, about 5 minutes. Drain and transfer potatoes to a baking sheet. Coat liberally with olive oil and season with herbes de Provence, sage, sea salt, and black pepper.
  • Roast in the preheated oven until tender, turning once, about 25 minutes.
  • Meanwhile, place tofu onto a plate and place another plate on top. Set a 3- to 5-pound weight on top. Press tofu for 20 to 30 minutes; drain and discard the accumulated liquid. Cut tofu into small dice.
  • Heat olive oil in a pan over medium-high heat. Add garlic and saute until golden, about 1 minute. Add mushrooms and cook until softened, 3 to 5 minutes more. Add zucchini and a sprinkling of sea salt; keep cooking for about 3 minutes more.
  • Add diced pressed tofu, scallions, lemon oil, rice vinegar, soy sauce, pear vinegar, and ginger to the pan with the vegetables. Stir in fennel seeds, curry powder, turmeric, sea salt, Chinese 5-spice powder, and ground pink pepper. Reduce heat to low and cook until flavors combine, 3 to 5 minutes more.

This savory scramble requires a few air fryer steps, and is topped with a sweet soy sauce drizzle and chopped, raw almonds.

½ cup soy sauce
½ cup brown sugar
½ cup mirin (Japanese sweet wine)
2 tablespoons raw whole almonds
1 (12 ounce) package firm tofu
½ pound fresh asparagus spears, cut into 1-inch pieces
olive oil cooking spray
1 teaspoon olive oil
1 teaspoon soy sauce
1 teaspoon rice vinegar
½ teaspoon garlic powder
1 tablespoon nutritional yeast
salt and pepper to taste

Steps:

  • Combine 1/2 cup soy sauce, brown sugar, and mirin in a small saucepan and bring to a simmer over medium heat. Cook until sauce has reduced by half, 5 to 10 minutes. Set aside to cool and thicken.
  • Meanwhile, place raw almonds into a small bowl and cover with water. Soak for at least 10 minutes, then drain. Cut each almond into thirds or smaller chunks if desired.
  • Press tofu block between paper towels. Place your hands on the top and bottom of the block and firmly squeeze out extra water. Set aside on a cutting board until ready to use.
  • Place asparagus spears in one layer across the crisping tray in the air fryer basket. Lightly spritz with olive oil cooking spray.
  • Set air fryer to 375 degrees F (190 degrees C) and cook asparagus for 10 minutes. Pull basket out after 5 minutes to shake vigorously; return basket and continue cooking. Pour cooked asparagus pieces into a large bowl.
  • Mix olive oil, 1 teaspoon soy sauce, rice vinegar, and garlic powder in a large bowl. Cut tofu block into 1/2- to 1-inch cubes and add to the bowl. Mix carefully to coat tofu cubes on all sides, keeping cubes as intact as possible. Toss cubes with nutritional yeast.
  • Place seasoned tofu cubes onto the crisping tray in the air fryer basket. Cook at 375 degrees F (190 degrees C) for 10 minutes, shaking vigorously after 5 minutes.
  • Mix tofu cubes and asparagus pieces together, pressing some of the cubes apart into a semi-scrambled texture. Drizzle sweet soy sauce over the mixture and top with chopped almonds.

GREEK STYLE TOFU SCRAMBLE

Love tofu scramble, here's another version. Original idea to incorporate some Greek flavours came from www.manyveggierecipes.com. My personal preference for any scramble is medium-firm tofu, water packed. Most recipes call for firm or extra firm, and that'll work, it's really whatever you like best. I know some people prefer silken for a really creamy texture. If you use firm or extra firm, you might need to add a little more liquid.

1 (350 g) package medium-firm tofu (or your preferred tofu)
1 lemon, juice of
1 teaspoon tahini
2 tablespoons water
2 tablespoons canola oil (or other neutral oil)
1 small onion, diced
3 garlic cloves, minced
1/2 cup mushroom, sliced (abaout 5 or 6)
1 fresh tomato, diced
1/2 bell pepper (red or orange looks nice)
2 cups fresh spinach, roughly chopped (a few good handfuls)
1/2 teaspoon turmeric powder
1/2 teaspoon mustard powder
1 tablespoon tamari (or Braggs, soy etc)
2 tablespoons nutritional yeast
1/2 teaspoon dried oregano
1/2 teaspoon dried basil

Steps:

  • Drain the tofu from it's packaging water. Place it in a bowl along with the lemon juice and break it up into chunks. Your hands make the best tools here. Set aside to marinate while you prepare the rest. You could also do this step ahead of time.
  • In a small bowl mix the tahini and water together -- it can be hard to mix tahini when it's cold, try using hot water and pressing the tahini against the edge of the bowl. Set aside.
  • Heat up 1 tbsp of the oil over medium heat, and add in the onion. Allow it to cook through, about 5 minutes. Mix in the garlic and mushrooms and leave for another 5 minutes or so. Next add the tomato, bell pepper and spinach. Allow that all to cook for another 3 minutes or so.
  • Push the veg mixture to the edge of you pan. Put the other tbsp of oil in the centre of the pan and when hot, add the turmeric and mustard powder to it. Allow those spices to sizzle in the oil for a minute then add in the tahini water, braggs or soy, nutritional yeast, mashed tofu, oregano and basil. Gently mix everything together well.
  • Adjust seasoning and allow it to cook until it thickens to your liking.

I was looking for something different and tasty for breakfast but didn't want to eat eggs. So I came up with this recipe. It's very filling but not overly spicy. If you like more heat add some hot sauce to it. This would be really good wrapped in a tortilla served with some salsa on the side.

1 medium onion (chopped)
1/2 sweet bell pepper (diced)
1 (14 ounce) package extra firm tofu (drained)
12 ounces vegetarian sausages (I used soyrizo meatless)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried parsley
1 tablespoon soy sauce
2 tablespoons nutritional yeast
1/2 teaspoon turmeric (optional)

Steps:

  • Crumble the tofu into large pieces. Remove the soyrizo from its clear wrapper and mix one of the sausages with the tofu. I found one link is plenty here.
  • Chop up the onion and bell pepper and saute it with the tofu/soyrizo mixture for about 5 minutes. Stir this frequently as it may stick and add a bit more oil if you want.
  • Warm your tortilla if using and then spread the tofu/soyrizo mixture on the tortilla. Fold up and enjoy.
  • You can also wrap the tortillas up in tin foil and keep warm, this will soften the tortilla.
  • Serve with your favorite salsa.
