VEGAN FRIED RICE WITH TOFU
Basically, I used tofu instead of eggs, and the meat-eaters thought it was beef! Note that I prepare the dish with a wok. A regular frying pan might require longer cooking time. I cook until everything looks done, so I don't always pay attention to the time. Experimenting is half the fun of stir-fry!

TOFU FRIED RICE (FROM COOKING LIGHT)
A superfast and healthy recipe, one of the greatest hits from the Sept 2004 issue of Cooking Light. The flavors are very mild and the dish is a good way to add some tofu to your diet. I've also made this with lean boneless pork or chicken. I think instant rice is an abomination so I take a little extra time to make the real thing.

THAI FRIED RICE NOODLES WITH CHICKEN OR TOFU (GLUTEN-FREE) RECIPE - (4.1/5)
Provided by á-46687
Number Of Ingredients 20
Steps:
- Marinate the chicken or tofu by pouring the cornstarch/soy sauce mixture over and stirring well. Set aside. Soak rice noodles in a pot of hot water 5 to 12 minutes, or just until noodles are soft enough to eat, but still firm and a little bit 'crunchy' (they will finish cooking later). Drain and briefly rinse noodles with cold water to keep from sticking. Set aside. Combine all stir-fry sauce ingredients, mixing them together in a cup. Set aside. Heat a wok or large frying pan over medium-high heat. When hot, add 2 tablespoons oil and swirl around, then add the garlic, ginger, chicken or tofu (together with the marinade), mushrooms, and a few tablespoons of stock. Stir-fry 5 minutes, or until chicken or mushrooms are cooked. When pan becomes dry, add a little more chicken stock, 1 t 2 tablespoons at a time - enough to keep the ingredients sizzling. Add red pepper and stir-fry another 1 to 2 minutes. Add the noodles plus stir-fry sauce. Using two utensils, lift and turn the noodles or use a tossing motion, like tossing a salad. Stir-fry in this way until the sauce is well distributed throughout the noodles (1 to 2 minutes). Add bean sprouts, continuing to stir-fry another minute. Remove from heat and taste-test for salt/flavor, adding 1 tablespoon more fish sauce or soy sauce if not salty enough. If too salty, add another squeeze of lime juice. To serve, lift noodles out of the wok or frying pan and mound on a serving platter. Sprinkle with fresh coriander and garnish with wedges of fresh-cut limes. For those who like it spicy, serve with Thai Chili Sauce on the side, and ENJOY!

Tips:
- Cook the rice ahead of time: For best results, use leftover rice that has been cooked and cooled in the refrigerator overnight. This will help the rice grains stay separate and prevent them from becoming mushy when fried.
- Use high-quality tofu: Extra-firm or firm tofu is the best choice for fried rice, as it holds its shape well and absorbs the flavors of the other ingredients.
- Press the tofu before cooking: This will help to remove excess moisture and make the tofu more crispy.
- Use a wok or large skillet: A wok or large skillet will allow you to cook the rice and tofu quickly and evenly.
- Heat the wok or skillet over high heat: This will help to create a nice sear on the tofu and prevent the rice from sticking.
- Use a variety of vegetables: Any vegetables you like can be used in fried rice. Some popular choices include carrots, peas, broccoli, and bell peppers.
- Add some protein: In addition to tofu, you can also add other proteins to your fried rice, such as chicken, shrimp, or beef.
- Season to taste: Soy sauce, oyster sauce, and fish sauce are all common seasonings used in fried rice. You can also add other spices and herbs, such as garlic, ginger, and green onions.
Conclusion:
Tofu fried rice is a quick, easy, and delicious meal that can be made with a variety of ingredients. It's a great way to use up leftover rice and tofu, and it's also a good source of protein and vegetables. With a little planning and preparation, you can make a delicious tofu fried rice that the whole family will enjoy!
