FOLAMI'S BBQ TOFU

Folami's BBQ Tofu image

Kwanzaa gatherings continue to go strong in community centers and at home in dining rooms, as they have since 1966. The seven-day holiday of self-reflection, often an extension of Christmas or the winter solstice, culminates with the karamu, or feast. The spread leans heavily vegetarian. In Atlanta, Folami Prescott-Adams dries, seasons, fries and broils pounds of tofu. Store-bought, tomato-based barbecue sauce provides the comfort factor. She is a 40-year veteran of Kwanzaa and maintains a spreadsheet of potluck logistics for her family and guests. Alongside this vegetarian barbecue, Dr. Prescott-Adams's buffet feeds more than 100 people, and the greatest hits include macaroni and cheese, red punch and black-eyed peas.

Time 30m

Yield 4 servings

Number Of Ingredients 5

1 pound extra-firm tofu, cut into 1/2-inch slices
1 tablespoon vegetable oil
1 tablespoon unsalted butter or vegan butter
1 tablespoon tamari
1/2 cup barbecue sauce

Steps:

  • Two and a half hours before serving, start drying out the tofu: Place the slices in a single layer between clean, dry dish towels or double layers of paper towels. Press to remove water from the tofu, and let stand for 2 hours, replacing the soaked towels once or twice, until there is very little water left in the tofu. (You can press and dry the tofu quickly, and use it immediately, but it will be less crisp.)
  • Heat a broiler to its highest setting. Heat a large skillet over medium and add the oil and butter, swirling to cover the bottom. Pour the tamari into a small, shallow dish. Press the tofu one last time. Quickly dip both sides of a single slice in the tamari and place it in the skillet. (Be careful as the liquid may lead to hot pops from the oil.) Repeat with the remaining tofu slices and tamari.
  • Cook until the tofu gets the same beautiful golden brown on both sides, 2 to 3 minutes per side. While the tofu browns, spread half of the barbecue sauce on a small rimmed baking sheet. Transfer the tofu to the barbecue sauce on the sheet, then cover with the remaining sauce. Broil, turning once, until the sauce thickens and bubbles, 2 to 3 minutes per side. Serve hot.

KOREAN STYLE BBQ TOFU

A sweet, savoury and spicy marinade infuses slices of otherwise plain tofu before they're crusted in sesame seeds and grilled to crispy perfection. More tofu recipes and ideas are in my cookbooks: http://yummysmells.blogspot.ca/p/buy-sarahs-cookbooks.html

Time P1DT15m

Yield 1 lb tofu, 4 serving(s)

Number Of Ingredients 11

1/3 cup soy sauce
1 small pear, peeled and diced
2 tablespoons toasted sesame oil
1 tablespoon rice vinegar
2 teaspoons honey
1 teaspoon ground ginger
1/2 teaspoon onion powder
3 garlic cloves
1 pinch red pepper flakes
1 lb extra firm tofu, drained, pressed and cut into 1/2-inch slabs
1/4 cup sesame seeds

Steps:

  • Combine all the ingredients (except tofu and sesame seeds) in a blender and puree. Pour into a shallow dish.
  • Place tofu in the marinade, turning to coat. Cover and place in the fridge for 24 hours - 5 days.
  • Remove tofu from the marinade (you can use it to make a sauce if you want, since there's no raw meat involved) and roll in the sesame seeds.
  • Preheat a grill pan or skillet over medium high heat (I don't recommend an actual barbecue for this unless the grate is really narrow). Grease well.
  • Place tofu in one layer on the pan and cook 6 minutes, then carefully turn over and cook another 5-6 minutes.
  • Serve as part of a rice or noodle bowl, or with a stir fry. This also tastes great as part of a sandwich or wrap.

BAKED BBQ TOFU (VEGAN)

Baked BBQ Tofu (Vegan) image

The BBQ sauce recipe is from veganmenu.blogspot.whatever as adapted from Slashfood and finally as slightly adapted by me. Serving suggestion: baked tofu, (cheesy) grits and spinach salad. Note: the barbecue sauce is best if prepared 12-48 hours in advance.

Time 45m

Yield 4 serving(s)

Number Of Ingredients 13

1 lb extra firm tofu, previously frozen, thawed, excess water squeezed out
1 tablespoon vegetable oil
1 small onion, finely diced
2 garlic cloves, minced
1 teaspoon black mustard seeds
1/4 teaspoon salt
2 tablespoons fresh parsley, chopped or 1 teaspoon dried parsley
1 1/2 teaspoons smoked paprika
1 cup tomato paste (I use one 6-ounce can tom paste then add ketchup to make up the difference)
1/2 cup Bourbon
1/3 cup maple syrup
1/4 cup dark balsamic vinegar
green onions or fresh chives

Steps:

  • SAUCE: In a large fry pan over medium heat, heat oil and saute onion and garlic until translucent.
  • Add mustard seeds, salt, parsley and paprika and simmer for 5 minutes.
  • Add remaining sauce ingredients, bring to a boil, then reduce heat and simmer on low for 30 minutes.
  • Remove from heat and let cool, then puree in blender until smooth.
  • Use immediately, or store in refrigerator for up to a week.
  • Preheat oven to 425 degrees.
  • TOFU: Cut the tofu into 3/4" thick slices.
  • Dip the slices in the BBQ sauce to coat.
  • Arrange the tofu slices in single layer in oiled casserole dish.
  • Bake for about 25 minutes or until sauce has baked into the tofu.
  • Transfer to serving platter and garnish with green onions or fresh chives.

Tips:

  • Choosing the right tofu is key. Firm or extra-firm tofu is best for grilling, as it holds its shape well and absorbs the marinade better.
  • Pressing the tofu before grilling is essential to remove excess moisture and help it absorb the marinade more evenly. To press the tofu, wrap it in a few layers of paper towels and place it on a plate. Top with another plate and weigh it down with something heavy, such as a can of beans or a heavy skillet.
  • Marinating the tofu for at least 30 minutes, or up to overnight, infuses it with flavor and helps keep it moist during grilling.
  • Grilling the tofu over medium heat helps prevent it from burning. Use a well-oiled grill grate to prevent the tofu from sticking.
  • Baste the tofu with the marinade or a barbecue sauce during grilling to keep it moist and flavorful.
  • Serve the tofu immediately with your favorite sides, such as rice, grilled vegetables, or a salad.

Conclusion:

Tofu is a versatile and delicious protein that can be grilled to perfection. With its mild flavor, tofu takes on the flavors of the marinade and barbecue sauce, making it a perfect choice for a variety of dishes. Whether you're a vegetarian or simply looking for a healthier alternative to meat, grilled tofu is a great option. With a little planning and preparation, you can easily create a delicious and satisfying grilled tofu dish that will impress your family and friends.
