100g butter (1/2 cup)
85g light brown sugar (3/4 cup)
2x 397g tins of sweetened condensed milk
300g plain flour (2 cups)
200g butter (1 cup)
100g caster sugar (1/2 cup)
Pinch of salt (optional)

Steps:

  • Turn on oven to 180C/350F
  • Place a layer of baking paper into a 9-inch square baking tin with some overhang to allow you to lift it out later
  • Cream butter and sugar together until sugar is just dissolved.
  • Add flour (and salt if using) and mix together to form clumps, using fingertips if necessary
  • Tip into the baking tin and press out evenly
  • Bake for 25-30 minutes until lightly golden
  • Remove and allow to cool
  • Melt butter and sugar together in a saucepan over a medium heat
  • Add the two tins of condensed milk
  • Bring to the boil, stirring constantly and allow to boil for 1-2 minutes
  • Turn down to a simmer and continue to stir for 10-15 minutes until the mixture has thickened and darkened
  • Tip over the shortbread layer, using the back of a spoon to make the mixture smooth, or shake the tin from side to side
  • Allow to cool and set

6 oz butter (1 1/2 sticks)
6 oz (3/4 cup) sugar
3 tbsp Lyle's Golden Syrup (available in British or specialty shops) omit if you cannot find it
7 fl oz (3/4 of 14 oz can/bottle) condensed milk
8 oz (1 cup) good quality chocolate (for top layer)
one recipe of Butter Shortbread (below)

Steps:

  • Press the shortbread into an 9" x 11" baking tray.
  • Lightly prick with a fork and bake for about 20 minutes. Set aside to cool.
  • Put the butter, sugar, Golden Syrup and condensed milk in a heavy bottomed pan and heat to bubbling, then simmer, stirring constantly, until thick and golden brown in color (about 30 mins).
  • Pour caramel over cooled shortbread, and set aside to cool.
  • When the caramel has set, melt the chocolate (I put it in the microwave on "defrost") and spread it evenly over the top of the caramel layer.
  • Refrigerate before cutting into slices.
  • Store in an airtight tin.

1 package German Chocolate cake mix
Ingredients called for on cake mix (eggs, oil, water, etc)
1 (14 oz) can sweetened condensed milk
1 jar caramel ice cream topping
1 (8 oz) container frozen whipped topping, thawed (Cool Whip)
4-6 Heath candy bars, crushed (I have also seen Heath bits over on the baking aisle by the chocolate chips- those would work perfectly too)

Steps:

  • Prepare and bake cake in a 9x13" baking pan as directed on back of cake mix. Let cake cool. Using a fork, poke holes all over the top of the cake. Mix together the sweetened condensed milk and caramel topping and pour all over the cake, letting it sink down into the holes. Spread whipped topping over the caramel layer and sprinkle with crushed Heath bars.
  • I keep this cake in the fridge- it's delicious cold!
