Tips for Making Toffee Ice Cream Dessert

  • When making the toffee sauce, use a heavy-bottomed saucepan and stir constantly to prevent burning.
  • If you don't have a candy thermometer, you can test the toffee sauce by dropping a small amount into a glass of cold water. If it forms a hard ball, it is ready.
  • It's important to work quickly when making the toffee ice cream base. Do not let the custard cool down too much before churning, or it will not freeze properly.
  • If you don't have an ice cream maker, you can still make this dessert. Pour the ice cream base into a metal bowl and place it in the freezer. Stir the mixture every 30 minutes or so until it is frozen solid.
  • To make the whipped cream topping, make sure the cream is very cold before whipping. Whip the cream until it forms stiff peaks.
