The most incredible hot chocolate in existence! Made with milk AND cream, with a generous helping of Toblerone chocolate too, of course. Inspired by Starbucks' Honey & Almond Hot Chocolate (RIP).

480ml (2 cups) whole milk
80ml (1/3 cup) double or heavy cream
100g (3.5oz) Toblerone, chopped into pieces
¼ - ½ teaspoon almond extract
1-2 tablespoons clear honey
Mini marshmallows (optional)
Chocolate sauce (optional)

Steps:

  • Place all the ingredients (except the marshmallows and chocolate sauce!) into a medium saucepan, and heat on medium, stirring almost constantly, until it starts to come to the boil. The Toblerone chocolate should be completely melted, although there will still be some little little specks of white nougat in there. You can leave these in (like I do) or strain the hot chocolate through a very fine sieve to get rid of them. Remove from the heat and pour into two mugs. Top with mini marshmallows, drizzle with chocolate sauce, and drink immediately.

150 grams (5.30 oz) white marshmallows
50 grams 1.80 oz) butter (| soft)
300 grams (11 oz) Toblerone (| milk chocolate variety + chopped)
60 mls (¼ cup) hot water
300 mls 1 ¼ cups) thickened cream (| whippable)
1 teaspoon vanilla extract

Steps:

  • Put marshmallows, softened butter, chopped Toblerone, and water in a medium-size glass bowl
  • Place bowl in the microwave. Melt ingredients in 30-second intervals, stirring well after each 30 seconds until completely melted and combined.
  • Whip cream and vanilla until thick.
  • Fold Toblerone mixture through cream gently. Continue folding until all ingredients are combined.
  • Spoon mixture evenly into 6 small glasses or serving dishes of your choice.
  • Place in the fridge to chill until you are ready to serve.
  • Any leftover mousse can be kept until the expiry date of the cream used.

3/4 pound plain chocolate loaf cake, chilled
3 3-ounce Toblerone milk chocolate bars, broken up
3 eggs, separated
4 tablespoons honey
1 cup heavy cream
1/2 teaspoon almond extract
1 3-ounce Toblerone bittersweet chocolate bar, finely chopped
1 1/2 teaspoons confectioner's sugar

Steps:

  • Line the bottom of an eight-inch springform pan with waxed paper or parchment paper. Cut the cake into 16 thin slices. Cut eight of the cake slices in half diagonally and line the bottom of the pan with half of them, fitting them in tightly. Cut the rest of the cake slices in half to make rectangles and use them to line the sides of the pan, overlapping them slightly. Refrigerate.
  • Put the milk chocolate in the top of a double boiler and heat over simmering water until the chocolate melts. It will not be smooth. Beat the egg yolks until light, then stir into the chocolate. Continue heating a few minutes longer. Remove from heat and transfer to a large metal bowl.
  • Beat the egg whites until softly peaked. Heat the honey to a simmer in a small nonstick pan and slowly drizzle it into the egg whites, while beating until they are stiff. Fold the egg whites into the chocolate mixture and chill at least an hour.
  • Whip the cream and fold it into the chilled chocolate mixture along with the almond extract and chopped bittersweet Toblerone. Cover the top with the remaining cake triangles. Cover with foil or plastic wrap and chill four hours or longer.
  • To serve, run a knife around the inside of the pan. Remove the sides of the pan and invert the dessert onto a serving dish. Carefully lift off the bottom of the pan, now on top, first running a thin knife between the paper and the metal. Peel off the paper. Dust the top with sifted confectioner's sugar and serve.
