I started liking grilled cheese & tomato sandwiches years ago at a little restaurant near my office. I would go about three times a week to order a grilled provolone cheese & tomato sandwich. Today I wanted something different, something a little spicier, so I made up the following recipe. I thought it was delicious! Hope you try it and enjoy it!

Number Of Ingredients 9

2 slices bread
2 slices tomatoes
2 slices swiss cheese (or your favorite kind)
2 teaspoons mayonnaise (or mayo to your taste)
1 pinch salt
1 pinch pepper
1 pinch italian seasoning
1 pinch garlic powder or 1 pinch minced garlic
2 tablespoons butter

Steps:

  • Spread both slices of bread with a light layer of mayo.
  • Put slice of cheese on one piece of bread.
  • Add tomato slices.
  • Sprinkle with salt, pepper& Italian Seasoning.
  • Cover tomato slices with other slice of cheese, then cover with other piece of bread.
  • In the meantime, heat griddle or pan with butter and garlic power or minced garlic.
  • Also spread butter on top of each side of bread.
  • Grill until sandwich is brown on both sides and cheese is melted.

2 slices bread (homemade strongly recommended, cracked wheat is my specific favorite)
1 medium organic tomatoes (room temperature or fresh from the stalk, do NOT attempt this with pale, store-bought types!) or 1 medium garden tomatoes (room temperature or fresh from the stalk, do NOT attempt this with pale, store-bought types!)
3 tablespoons Miracle Whip or 3 tablespoons mayonnaise
salt, to taste

Steps:

  • Toast bread.
  • Slice tomato.
  • When bread is adequately toasted, liberally spread both sides with Miracle Whip (or butter one side with Miracle Whip on the other).
  • Lay tomato slices on one side of bread.
  • Salt tomato to taste.

4 ripe tomatoes, sliced

3 Tbsp. extra-virgin olive oil
2 (6-oz.) packages paneer
1 medium onion, finely chopped
6 garlic cloves, finely chopped
½ jalapeño, seeds removed, finely chopped
1 (1") piece ginger, peeled, finely chopped
1 tsp. cumin seeds
½ tsp. mustard seeds
2 tsp. ground coriander
½ tsp. cayenne pepper
½ tsp. ground turmeric
1 (15-oz.) can crushed tomatoes
2 tsp. Diamond Crystal or 1¼ tsp. Morton kosher salt
12 bread slices
1 small red onion, thinly sliced
1½ cups coarsely grated sharp cheddar or low-moisture mozzarella
½ cup chopped cilantro
3 Tbsp. unsalted butter
Ketchup (for serving)

Steps:

  • Heat oil in a large Dutch oven or other heavy pot over medium. Cook paneer in a single layer, undisturbed, until golden brown underneath, about 2 minutes. Turn over and cook on other side until golden brown, about 2 minutes. Transfer to a medium bowl; let cool slightly, then crumble into bite-size pieces. Set aside.
  • Add onion, garlic, jalapeño, ginger, cumin seeds, and mustard seeds to same pot and cook (still over medium), stirring often, until onion is softened and translucent, about 5 minutes.   • Spread a slice of bread with ½ cup sauce. Top with some of the red onion, cheddar, and cilantro (about a sixth of each); close up sandwich with another slice of bread. Repeat with remaining ingredients to make 5 more sandwiches.
  • Melt 1 Tbsp. butter in a small nonstick skillet over medium. Cook 2 sandwiches, pressing down occasionally on them with a spatula to ensure good contact with the pan, until underside is golden brown and crisp, about 3 minutes. Turn sandwiches over and cook until other side is golden brown and cheese is melted, about 3 minutes. Transfer to a plate. Repeat process two more times with remaining butter and sandwiches.

THIS IS A SANDWICH THAT REALLY SHOWS OFF THE CHEESE. We use Flagship and Just Jack cheeses, but any semihard cheese, such as Cheddar or Gruyère, will work beautifully. For a heartier sandwich, add a few slices of smoked turkey.

1/4 cup Basic Mayonnaise (page 234) or any all-natural mayonnaise
1 1/2 tablespoons whole-grain mustard
2 dashes Tabasco or other hot sauce
8 slices hearty artisanal white bread
4 ounces semihard cheese (page 23), cut into 8 thin slices
2 tomatoes, sliced 1/4-inch thick
12 fresh basil leaves
2 ounces semisoft cheese (page 23), cut into 8 thin slices

Steps:

  • In a small bowl, whisk together the mayonnaise, mustard, and Tabasco sauce until fully combined.
  • To assemble the sandwiches, spread half of the mayonnaise mixture on 4 slices of bread. Layer 2 slices semihard cheese, 2 slices tomato, 3 basil leaves, and 2 slices semisoft cheese on top of each piece of bread. Spread the remaining 4 slices bread and place them, mayonnaise side down, on top of the cheese slices.
  • Heat a large skillet over medium heat and put the sandwiches in the pan. Cook until the cheese has melted and the bread is golden brown, about 3 minutes per side. Serve warm.
