Homemade Chicken Pot Pie image

I don't have to sell you on Chicken Pot Pie ... we all know how incredibly delicious it is! Make it from scratch to avoid highly processed ingredients. Save a little time during the week by prepping everything ahead of time.

4 tablespoons butter
½ cup onion (diced)
3 carrots (diced)
3 ribs celery (diced)
2 cloves garlic (minced)
½ cup frozen peas (no need to defrost - I used Cascadian Farm brand)
3 cups chicken (shredded and cooked)
4 tablespoons whole-wheat flour
3 cups chicken broth
1 cup milk
¾ teaspoon salt
¼ teaspoon pepper (or to taste)
¼ cup parsley (chopped (leaves only))
1 cup whole-wheat flour (+ 2 tablespoons, and extra for rolling out the dough)
¼ tsp salt
½ cup butter (unsalted and cold)
¼ cup water (plus ice)
1 egg (beaten with a splash of water)

Steps:

  • Preheat oven to 400 degrees F.
  • In a large sauté pan over medium heat, add 4 tablespoons of the butter. Once heated add the onion, carrots and celery and sauté until it begins to soften, about 4 to 5 minutes. Add the garlic, frozen peas, and chicken (I highly recommend the Best Whole Chicken in a Crockpot recipe for this!) and cook for about 2 more minutes.
  • Sprinkle in the flour and stir just until the flour is almost completely absorbed. You can add a little more butter here if your pan gets too dry.
  • Add the broth and milk and turn heat to high. Bring to a boil then reduce heat and simmer for about 15 to 20 minutes, stirring occasionally, until the mixture thickens to the consistency of a thin gravy.
  • Meanwhile, to make the crust pulse together the flour and salt in the bowl of a food processor fitted with the dough blade. Cut the cold (straight from the fridge) butter into tablespoon-sized chunks. Drop them on top of the flour and turn the machine on until the mixture resembles coarse crumbs. While the machine is still going pour in the ice cold water (cubes removed) until the dough comes together. Roll it out onto a floured surface into a big circle just slightly larger than your round baking dish.
  • Once the chicken mixture has thickened, remove it from the heat and stir in the salt, pepper, and parsley. Pour into a round baking dish and position the dough on top while pinching all along the sides. Brush with the egg and pierce some holes in the top with a fork.
  • Bake on a rimmed baking sheet (it may spill over) until golden brown, about 20 to 25 minutes. Serve warm and enjoy!

6 carrots, chopped
6 stalks celery, chopped
1 cup fresh or frozen peas
1 cup fresh or frozen green beans, thawed
1 cup corn kernels
1 yellow onion, diced
1 cup quartered red potatoes
3 cups chicken broth
1 teaspoon thyme
½ teaspoon salt
½ teaspoon ground black pepper
4 (.87 ounce) packages dry chicken gravy mix
4 cups water
1 (15 ounce) package double crust ready-to-use pie crusts (such as Pillsbury®)
1 whole roasted chicken, bones and skin removed, meat shredded
¼ cup butter, cut into pieces
1 egg
¼ cup milk

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Place a baking sheet on the a rack on which you'll bake the pie.
  • Combine the carrots, celery, peas, green beans, corn, onion, red potatoes, and chicken broth in a large pot. Season the vegetable mixture with thyme, salt, and black pepper; bring to a boil. Reduce heat to medium-low, cover, and simmer until the vegetables are tender, about 15 minutes. Drain the vegetables and set aside.
  • Place dry chicken gravy mix into another saucepan and gradually whisk in the water until smooth. Bring the mixture to a boil, reduce heat to medium-low, and simmer until thickened, about 1 minute. Set gravy aside and allow to continue to thicken as it cools.
  • Press one of the pie crusts into the bottom of a 9-inch pie dish. Spoon a layer of gravy (about 1/3 cup) into the crust. Layer the cooked vegetables and shredded chicken into the crust until the filling is level with the top of the pie dish. Pour the rest of the gravy slowly over the filling until gravy is visible at the top. Scatter butter pieces over the filling; top with second crust. Seal the 2 crusts together and crimp with a fork.
  • Whisk the egg and milk together in a bowl, and brush the egg wash over the top crust. Pierce the top crust several times to vent steam.
  • Bake the pot pie in the preheated oven until the filling is bubbling and the crust is golden brown, about 45 minutes to 1 hour. Check periodically to see if the edge of the crust is browning too quickly; if needed, cover the edge with a strip of aluminum foil to prevent over-browning.

It's loaded with artery clogging Fat, and sooooo many calories - and it doesn't matter which frozen brand you buy - they're all just as bad. BUT - THIS RECIPE FOLKS IS THE SOLUTION! Yes - you can have your cake and eat it too. (or in this cake your pot pie) This recipe is SO LEAN, SO LOW IN CALORIES, but HIGH in VITAMINS, FLAVOR, FIBER, PROTEIN - you will NOT believe it's good for you. AND..... It tastes 1,000 times better than the heart-attack frozen versions in the freezer section. WHY THIS WORKS: I took out butter, cream, milk, and the horrible "All Purpose Flour" which is all basically poison. Sure, you might think those all taste great, but is 5 minutes of taste worth a 16 hour heart-bypass surgery? Why have the worry, and bad health when you can make this which tastes just as good and comes without the huge scar on your breast-bone. 2 (6 ounce) packages vegetarian chicken strips, lightlife smart strips chick 'n style seasoned veggie strips meat free (has 0 grams of fat and 14 grams of protein)
2 cups peas and carrots
1/2 cup chopped celery
1/4 cup chopped red bell pepper (optional, for added vitamins and a sweeter taste)
1/4 cup sauted mixed mushrooms (I like crimini, which are tiny portobello mushroom, but whatever mushrooms you like, please use less)
1/3 cup chopped leek (or scallion or shallot)
1 1/3 cups vegetable stock (which has 0 grams of Fat)
1/4 cup white wine (totally optional)
1 teaspoon garlic salt
1 teaspoon fresh tarragon (optional as well)
1 teaspoon sage
1 teaspoon thyme
1 teaspoon white pepper (or black if you prefer)
2/3 cup soy flour (for a THICK gravy, if you like yours thinner, don't use all of this, just use enough until its the c)
2 teaspoons Worcestershire sauce

Steps:

  • Mix vegan chicken, all the spice and veggies with 1 cup of veggie stock (and wine if you chose to use it) into a pan and cook on high heat for 5-10 minutes, until frozen veggies are soft.
  • Mix together soy flour, worcester sauce and the rest of veggie stock together until it looks like peanut butter. Then add to the cooked veggie mix.
  • Mix everything together, adding a little more soy flour if you'd like it thicker.
  • Line a pie dish with the low carb tortilla and pour the the entire contents into the pie dish.
  • Cover with a 2nd tortilla if desired to create a double crust pie shell effect.
  • Put into over at 400 degrees for about 25-30 minutes.
  • Set for 5 minutes.
  • Enjoy with no guilt!

1 cup sliced carrots
1 cup frozen green peas

2 can(s) 15 oz. original veg-all mixed vegetables drained (they even have potatoes in them)
1 can(s) campbells cream of chicken soup
1 tub 10oz. of philadelphia cooking creme savory garlic

2 whole chicken breast diced ( i used rotisserie chicken all ready cooked)
1 egg
1 Tbsp water

1 teaspoon pepper

2 1/2 cups self rising flour
1 cup fat free egg substitute
1/2 cup skim milk
2 green onions, chopped

Steps:

  • Preheat your oven to 400F.
  • Saute your vegetables in a large skillet until tender.
  • Add chopped up chicken and cook about 5 minutes.
  • Add stock and half the wine, bring to a simmer and cook until everything is tender (10 minutes) You may need to add more stock.
  • Mix remaining wine with cornstarch in a small bowl and add stirring until everything thickens.
  • Pour into a casserole dish and set aside.
  • Put the flour in a bowl, add in green onions.
  • Mix the egg substitute with milk and add to the flour and mix until no large clumps of dry flour are left. You may need to add more milk, you want the consistency of incredibly thick pancake batter but not something that you would roll out on the counter.
  • Carefully spoon over top of the filling in the casserole dish.
  • Bake approx 20 minutes or until nice and brown.
