Categories     Dessert

Time 35m

Number Of Ingredients 9

3 fresh, very ripe peaches (halved and pitted)
2 tablespoons extra virgin olive oil
2 tablespoons pure maple syrup or honey
1 tablespoon brandy (bourbon, or rum (optional))
1 tablespoon coconut sugar or light brown sugar
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon kosher salt
Vanilla ice cream, Greek yogurt, or heavy cream, for serving

Steps:

  • Preheat oven to 350 degrees F. Lightly coat a 9x9-inch or similarly sized baking dish that's large enough to hold the peach halves in a single layer with nonstick spray. Pick a dish that's sized to where your peaches fit comfortably side by side, but there isn't too much excess room around them. Arrange peaches cut-side up in the dish.
  • In a medium mixing bowl, stir together the oil, maple syrup, brandy, coconut sugar, vanilla, cinnamon, and salt. Spoon the mixture over the peaches, filling the center and letting it run over the sides.
  • Bake peaches, uncovered, until the peaches are cooked through and fork-tender, about 30 minutes. Serve warm, topped with vanilla ice cream, Greek yogurt, or a pour of heavy cream, as desired.

Time 1h15m

Yield 4 servings

Number Of Ingredients 11

4 chicken breast halves
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 tablespoons butter
1 large onion, finely chopped
1 teaspoon paprika
1 1/2 cups green onions, chopped (about 6 green onions, including green part)
1/2 cup orange juice
2 tablespoons bourbon
1 cup chopped fresh peaches (about 2 medium peaches)
Dash nutmeg

Steps:

  • Preheat oven to 400 degrees.
  • Sprinkle chicken quarters with salt and pepper. Place in a 13 by 9-inch baking pan and set aside.
  • In a medium skillet, melt the butter over medium heat. Add the chopped onion and cook, stirring occasionally, until translucent, about 5 minutes. Add the paprika and all but 1 tablespoon of the green onions and continue to cook, stirring occasionally, for an additional 4 minutes.
  • Spread the onion mixture evenly over the chicken, spoon the orange juice and bourbon over the top, and bake in the preheated oven for 30 minutes, turning and basting occasionally.
  • Remove the chicken from the oven, spoon the peaches over the top, sprinkle with nutmeg, and return to the oven for an additional 15 to 20 minutes or until the chicken is tender and shows no trace of pink near the bone. Remove the chicken from the pan, place on serving dish, and pour the juices over the chicken. Garnish with the remaining green onions and serve immediately.

ROASTED PEACHES

A low oven temperature and a touch of fresh lime juice take ripe summer peaches to the next level. Serve alongside Rose-Geranium-and-Cardamom Ice Cream and Almond Cookies.

Categories     Food & Cooking     Dessert & Treats Recipes

Time 1h10m

Number Of Ingredients 5

6 ripe but firm peaches (about 2 1/4 pounds), halved, pitted, and cut into 1-inch wedges (about 6 cups)
2 tablespoons fresh lime juice
1 teaspoon extra-virgin olive oil
Kosher salt and freshly ground pepper
2 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 225 degrees. In a bowl, gently toss peaches with lime juice and oil. Lightly season with salt and pepper. Spread in a single layer on a rimmed baking sheet lined with parchment. Place confectioners' sugar in a fine-mesh sieve and dust peaches evenly.
  • Bake until peaches darken and begin to curl, about 1 hour. Let cool completely; serve.

Tips:

  • Choose ripe, firm peaches: This will ensure that the peaches hold their shape during roasting and have a sweet, juicy flavor.
  • Use a variety of peaches: This will give your dish a more complex flavor and texture. Try using a mix of white and yellow peaches, or even adding a few donut peaches for a unique twist.
  • Roast the peaches until they are slightly caramelized: This will give them a delicious, smoky flavor. Keep an eye on the peaches as they roast, and remove them from the oven when they are just starting to brown.
  • Don't overcrowd the baking sheet: This will prevent the peaches from roasting evenly. If you are using a large batch of peaches, roast them in batches.
  • Serve the peaches warm or at room temperature: This will allow the flavors to meld together and the peaches will be at their most delicious.

Conclusion:

Tipsy roasted peaches are a delicious and easy dessert that is perfect for any occasion. They are also a great way to use up any leftover peaches you may have. With their sweet, juicy flavor and caramelized exterior, these peaches are sure to be a hit with everyone who tries them. So next time you are looking for a special dessert, give tipsy roasted peaches a try. You won't be disappointed.
