I "rediscovered" this recipe in my files and forgot how good this is. Great with some fresh creamy butter!

1 (8 1/2 ounce) box Jiffy corn muffin mix
1 (9 ounce) box jiffy golden yellow cake mix
2 eggs
2 tablespoons butter, melted
3/4 cup milk
1/2 cup cold water

Steps:

  • Mix both mixes together in large bowl.
  • Add eggs, melted butter, milk and water.
  • Mix until smooth.
  • Bake in 12" greased cast iron skillet in 400º preheated oven for approximately 15-20 or until golden brown and knife comes out clean from center.

1 cup yellow cornmeal
1 cup all-purpose flour
4 teaspoons baking powder
1 egg
1/4 cup melted butter
1 cup milk
1 (9 ounce) package jiffy yellow cake mix

Steps:

  • Preheat oven to 400 degrees.
  • Mix cake mix according to directions, being careful not to beat air into mixture.
  • Mix the rest of the ingredients and gently fold in cake batter.
  • Pour into two greased 8 inch pie pans or a 13-by-9-by2-inch baking pan.
  • Bake until lightly browned, estimated to be about 25-35 minutes.

I hate that there are no longer any Tippins around. that I know of. I loved going for soup, salad and that glorious piece of cornbread. Looking through some of my favorite cookbooks and found this scribbled amongst my recipe notes.

Number Of Ingredients 6

1 box duncan hines yellow cake
2 box jiffy corn bread mix
2 large eggs
2/3 c sweet milk whole
1/2 c water
1/4 c vegetable oil

Steps:

  • 1. preheat your oven to 400 degrees Bake for 10 minutes then reduce heat to 350 degrees for 15-22 minutes
  • 2. Mix boxed ingredients, gently stir
  • 3. add remaining ingredients and fold in until all is moistened and incorporated
  • 4. Have a Greased 9" X 13" x 2" pan prepared If you choose to have a really tall piece of cornbread, then use a 8 x8 x 2 pan that has been thoroughly greased.
  • 5. Pour bowl ingredients into pan and Bake 10 minutes at 400 degrees then15-22 minutes at a reduced heat of 350 degrees. Test with toothpick as ovens vary, when toothpick comes out clean. Serve warm with honey butter, soup or salad
