OLD BAY TILAPIA, SWEET POTATOES AND VEGGIES

Old Bay Tilapia, Sweet Potatoes and Veggies image

I'm not a huge fan of the classic sweet potato casserole, so I concocted this dish. The reds, oranges, and yellows are perfect for fall entertaining! Then I decided that the flavors would complement tilapia, orange roughy, or any white fish really well. It was a hit as both a vegetable side and as a full meal.

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 10

2 tablespoons olive oil
3 large sweet potatoes
1 red pepper
1 yellow pepper
1 medium red onion
1 medium tomatoes
2 teaspoons Old Bay Seasoning (more if you want it spicier!)
1/2 teaspoon black pepper (again, you can add more)
1 tablespoon parsley
18 ounces tilapia fillets (about 3 filets) or 18 ounces other white fish (about 3 filets)

Steps:

  • Preheat oven to 350°F.
  • Wash and scrub the sweet potatoes (or remove the skin, but I like to keep it). Cut them into cubes about 3/4 inch in size. Place in a 13x9 inch pan.
  • Chop the onion and peppers into 1 inch by 1/4 inch slices. (I think that the dish look better when they are this size. It's really not important how large they are.) Add to the pan.
  • Dice tomato. Add to pan with other veggies.
  • Add olive oil, old bay seasoning, pepper, and parsley to taste. Stir well to coat veggies.
  • Bake in oven for 25 minutes.
  • Add tilapia filets to bottom of pan by scooping veggies aside and covering the fish with some of the veggies. Bake additional 20 minutes until fish flakes.

Tips:

  • To ensure your tilapia fillets are cooked evenly, make sure they are all of similar thickness. If you have fillets of varying thicknesses, cook the thinner ones for a shorter amount of time and the thicker ones for a longer amount of time.
  • For a crispy skin on your tilapia, pat the fillets dry with paper towels before cooking. This will help to remove excess moisture and allow the skin to brown more easily.
  • To prevent the sweet potatoes from sticking to the pan, make sure the pan is well-oiled before adding them. You can also toss the sweet potatoes with a little bit of olive oil before roasting them.
  • To make sure your sweet potatoes are cooked through, pierce them with a fork or knife. If the fork or knife goes through easily, the sweet potatoes are done.
  • If you don't have a baking sheet, you can also roast the sweet potatoes in a large skillet. Just be sure to spread them out in a single layer so that they cook evenly.

Conclusion:

This recipe for tilapia with sweet potatoes is a healthy and delicious meal that is perfect for a weeknight dinner. The tilapia is mild in flavor and pairs well with the sweet and savory sweet potatoes. The dish is also very easy to make, and it can be on the table in less than 30 minutes.
