4 6 ounce tilapia fillets
3 cups broccoli florets (cut into 1 inch pieces)
1 yellow squash (sliced)
1 1/2 cups carrots (thinly sliced)
4 Tablespoons olive oil ((divided))
2 Tablespoons lemon juice
1 Tablespoon garlic (minced)
1 Tablespon fresh parsley ((1 1/2 teaspoons dried))
1/4 teaspoon dried red pepper flakes
1/4 teaspoon onion powder
Salt & pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Place veggies on baking sheet and drizzle with 2 tablespoons olive oil. Sprinkle with salt and pepper, mix, and then push to the sides of the pan.
  • In a small bowl, mix remaining 2 tablespoons olive oil, lemon juice, garlic, parsley, red pepper flakes, and onion powder together. Place tilapia on pan between the veggies and rub the marinade on all sides of the fillets. Sprinkle tilapia with salt and pepper.
  • Bake for 12-15 minutes or until fish reaches 145 degrees F and flakes easily. Serve immediately.

2 tablespoons dry vermouth

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Create aluminum foil packets for each fillet. Place fish into the individual foil packets and place carrots and celery on top of each fillet. Divide vermouth and butter evenly between each pouch. Seal each foil packet and place on a baking sheet.

3 large fresh Brussels sprouts, thinly sliced

1 small carrot, thinly sliced
2 tablespoons butter, melted
1/2 teaspoon garlic salt
1/2 teaspoon pepper
2 tilapia fillets (6 ounces each)
2 teaspoons minced fresh tarragon or 1/2 teaspoon dried tarragon
1/8 teaspoon salt
1 tablespoon butter, softened
Optional: Lemon wedges and tartar sauce

Steps:

  • Preheat oven to 450°. Line a 15x10x1-in. baking pan with foil; grease foil., In a large bowl, combine the first 5 ingredients. Add melted butter, garlic salt and pepper; toss to coat. Place vegetables in a single layer in prepared pan; bake until potatoes are tender, about 20 minutes., Remove from oven; preheat broiler. Arrange vegetables on 1 side of sheet pan. Add fish to other side. Sprinkle fillets with tarragon and salt; dot with softened butter. Broil 4-5 in. from heat until fish flakes easily with a fork, about 5 minutes. FISH PREP:
2 medium fish filet's, your choice-i like tilapia
1 large egg white,beaten
1/4 tsp salt
1/2 c baking flour
1/2 c wheat flour
1 Tbsp italian seasoning
4 Tbsp coconut cooking oil-more if needed
VEGGIE PREP:
1/2 c potatoes,sliced or chopped thin
1/4 c chopped onion
1/2 c chopped thinly,sweet potatoes or carrots or some of each
3 Tbsp olive oil
3 Tbsp white grape juice

Steps:

  • 1. Heat oven to 350^. Toss vegetable in medium bowl, combine olive oil and grape juice and pour over veggies; toss to coat well, sprinkle with salt and pepper to taste. Place on a foil lined baking dish that haas been coated with coconut oil. Roast in oven for 25 minutes, until fork tender. --- Note: Can use frozen mixed vegetables, 1 1/2 cups thawed.
  • 2. Fish: In a shallow dish or pan place the egg white and salt and beat to make fluid. In another shallow pan combine the flours and seasoning, mix to blend. Rinse and pat dry the filets.
  • 3. Place a large heavy bottomed skillet over medium high heat and add the coconut oil. Dip one piece of fish in the egg white to coat on both sides then coat evenly with the flour mixture.Shake off excess flour gently.
  • 4. Place fish in hot oil and fry until crispy on one side then turn over gently and fry other side; about 1 minute for each inch of thickness. Keep warm in oven covered slightly the last 5 minutes of the veggies baking.

16 oz tilapia fillets
1 lemon sliced
16 oz frozen vegetetables (broccoli, cauliflower and carrots works well )
sprinkle of seasonings of your choice.
cooking oil spray

Steps:

  • 1. Preheat the oven to 400' Spray cooking oil on the bottom of a 9x13 baking dish. Place the tilipia filets which have been seasoned in the bottom of the baking dish.
  • 2. The seasonings I use ( sparingly) are garlic powder and blackend redfish seasoning (chef paul's) Top each filet with a slice of lemon. Arrange the frozen vegetables (which have been seasoned lightly to your liking) around the fish.
  • 3. Cover the dish and bake for 25-30 minutes until the vegetables are tender and the fish flakes easily with a fork. I serve the dish with a baked potato and a garden salad. Enjoy !

4 (4 -5 ounce) tilapia fillets, thawed if frozen and patted dry with paper towels
kosher salt
fresh ground black pepper
1/2 lemon, zest of
1 tablespoon olive oil
3 tablespoons butter
8 ounces almonds, coarsely chopped
1 lemon, juice of
1 lb cauliflower, cut into florets
1 red onion, cut into 1-inchx2-inch wedges (cut into 1-inch wedges, lengthwise, then cut each in half, crosswise)
1 pint grape tomatoes, halved
olive oil
kosher salt
fresh ground black pepper
fresh parsley, chopped

Steps:

  • Preheat oven to 400 degrees F; line 2 baking sheets with aluminum foil and cut off an additional 4 squares of foil to make fish packets.
  • Melt butter in olive oil over low heat; brush foil squares with just a small amount of this mixture (the remainder will be used for the sauce) - alternatively, you can spray the foil with cooking spray.
  • Season both sides of the fish with salt and pepper; lay one fillet on each foil square and grate the lemon zest over each.
  • Close up packets and arrange on a prepared baking sheet; bake until fish flakes easily with a fork, 20 to 25 minutes.
  • Meanwhile, place cauliflower florets, onion, and tomatoes in a bowl and drizzle with olive oil; arrange, in a single layer, on the other prepared baking sheet.
