¾ cup coarsely chopped green pimento-stuffed olives
1 tbsp chopped or ½ tsp dried oregano, crushed fresh oregano
¼ tsp salt
⅛ tsp freshly ground pepper
4 (6 to 8 oz each) tilapia fillets

Steps:

1 cup sliced cremini or button mushrooms
16 large pimiento-stuffed olives, (coarsely chopped)
1 tablespoon snipped fresh oregano ((or ½ teaspoon dried, crushed))
¼ teaspoon salt
⅛ teaspoon freshly ground black pepper
Four 6-ounce tilapia fillets

Steps:

  • In a large skillet, heat the olive oil over medium heat. Add the onion and garlic; cook until the onion is tender, 2 to 3 minutes. Add the tomatoes, mushrooms, olives, oregano, salt and pepper. Bring the sauce to boiling.

3 tomatoes, peeled, seeded and chopped
