4 tilapia fillets (6 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon all-purpose flour
1 tablespoon olive oil
1/2 cup reduced-sodium chicken broth
2 tablespoons lemon juice
1 tablespoon butter
1 tablespoon drained capers
Lemon wedges, optional
Hot cooked pasta, optional

Steps:

  • Sprinkle tilapia with salt and pepper. Dust lightly with flour., In a large skillet, heat oil over medium heat. Add tilapia; cook until lightly browned and fish just begins to flake easily with a fork, 3-5 minutes per side. Remove from pan; keep warm., Add broth, lemon juice, butter and capers to same skillet; cook and stir until mixture is reduced by half, about 5 minutes. Spoon over tilapia. ¼ cup all-purpose flour
1 tablespoon butter
1 tablespoon olive oil
½ cup white wine
¼ cup fresh lemon juice
2 tablespoons capers
2 teaspoons minced garlic
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Place each chicken breast between 2 sheets of heavy-duty plastic wrap. Pound breasts to 1/2-inch thickness using a meat mallet or small heavy skillet.
  • Spread flour into a wide, shallow dish. Press chicken into flour to coat completely.
  • Melt butter with olive oil in a large skillet over medium-high heat; cook chicken in hot butter mixture until no longer pink in the center and the juices run clear, 3 to 5 minutes per side. Remove chicken from skillet to a serving platter and cover with a lid to keep warm.

1 lemon, juice of
3 tablespoons butter, divided
1/2 cup chicken broth
3 tablespoons capers
4 tilapia fillets or 4 chicken cutlets
1 tablespoon virgin olive oil
4 tablespoons flour
2 teaspoons garlic powder
1 1/2 teaspoons morton natures seasoning or 1 1/2 teaspoons lawrys seasoning
1/4 teaspoon paprika

Steps:

  • In a skillet pan place 1/2 the butter and olive oil to heat up on medium high.
  • place all the dry ingredients in a gallon size plastic baggy, mix well and then add the tilapia or chicken and coat well.
  • place the tilapia/chicken in the oil/butter mix and cook without burning ( lower heat if needed) so it cooks half way and is golden brown approximately 4 min, then flip to cook other side of tilapia.
  • let talapia/chicken cook 1- 2 min then add remaining butter, capers, lemon juice and chicken broth. reduce heat to med low and sauce will thicken slightly.
  • Serve with pasta, rice or with a veggie for a quick and tasty meal everyone will love.
  • I actually double the sauce, pull out the fish when it is done place a little sauce over the fish and the remaining sauce I place over angel hair pasta. This is my daughter favorite meal. I make the same exact meal with chicken cutlets as well. Garnish with lemon slices on top of Tilapia or Chicken cutlets.
